Kulich didn't work, what did you do wrong?

Ta-nyusha
Kind time of the day. I apologize in advance if I got into the wrong topic - nothing at all on the forum. haven't got my bearings yet. I have a problem with the Easter cake. Took a recipe from the Alexander Seleznev recipe book attached to the Panasonic SD-2500:
Kulich
Dry yeast - 7 g
Wheat flour - 450 g
Salt 6 g
Granulated sugar - 50 g
Vanilla sugar - 1 sachet
Chicken eggs 4 pcs.
Butter - 100 g
Lemon juice 50 ml
Mix of ground nuts, candied fruits and raisins full dispenser (150 g)
As a result, it was uncomfortable in front of my husband - the cake slid on its side, almost did not rise, the crust is tough, the dough was baked with some kind of cords. Good yeast the day before I baked bread with rye flour - it turned out great. I would be grateful if you point out to me the mistakes, what I did wrong.

Ta-nyusha, Errors two, the first, little liquid, the second oven is still better according to recipes from the forum. Similar proven recipe https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=3502.0.html as you can see, 250 ml of milk is added in it
Ta-nyusha
sazalexter, Thank you. Climbed to the forum, the second day I do not get out. I like everything, I want everything !!!

Usually, I baked a cake according to this recipe, it turned out wonderful, you need to observe the amount of ingredients and the method of preparation.
If the recipe in the first post is indicated correctly, then that liquid is only 50 ml. lemon juice
Scarecrow
Aunt Besya,

4 more eggs, by the way. But the amount is exactly for making dumplings))). Classic - 1 egg per 100g of flour)).
Aunt Besya
It's still not enough ((

not so little. 4 eggs with a conditional weight of 60 g (+ -). In general, you need to look into the bread maker at least sometimes. Here I have: 1. baked according to a proven recipe, and had to add a lot of milk. 2. the dough did not rise very well, I had to turn off the stove, wait for it to rise. And if I let everything go by chance, I got a brick at the exit. Would. But no, a gorgeous Easter cake turned out.

I agree with these 100%
I, for example, bake on "Makfa", generally unpredictable flour, absolutely different amounts of liquid can take!
Hence, the conclusion is that we teach materiel, the recipe is just a direction ..

Very accurately marked .. Although this is a technique, but control over it is needed.
I already noticed that as soon as you need to run somewhere and 10-15 minutes are not enough to control the process to the end, the result will not be 100%! As soon as you control everything from weighing to the end of baking, there will be no limit to delight! The result will always be impressive!
Yesterday, it was confirmed once again for me on three bookmarks of cakes!
The first tab - well, there was no time at all, I really spent the whole morning on the run. The result is 0 out of 10.
The second bookmark controlled everything. Result 10 out of 10
The third bookmark - did not fully control the rise (I went to the bath for 15 minutes and the rise became very active) - the result is 8 out of 10!
Chef
And I am an opponent of peeping. I didn't buy a bread maker for that

The recipe is correct, 50 ml of lemon juice and 4 eggs are enough to get such a cake Kulich didn't work, what did you do wrong?

I have a tolmouth with the proud name "The Pastry Chef's Bible" on the shelf, dead weight. Several times I tried to cook according to recipes from it. As a result, either something inedible was obtained, or the recipe had to be thoroughly adjusted.Chesslovo, I'm already afraid of Seleznev's recipes.

Ah ha ha !! That would be to bill Seleznev for spoiled food and moral damage! I can imagine how he would have gone broke if all the housewives who cooked according to his book did this!
I, too, once tried a couple of times to use his recipes, as a result, no products, no mood
Aunt Besya
I was just yesterday at Ozone examined this "Bible", then read the abusive reviews and thought better of it in time

It is forgivable for the Chef not to drop in .... That's why he is the Chef ... and in most cases for beginners turns out to be about like this....

The recipe is absolutely correct for making dumplings dough as Scarecrow said.

There is very little liquid and sugar for butter dough.

Besides, Ta-nyusha, Tatyana, in what order did you put the products in the KhP?

and this has to do with it?

How and how! In the instructions for all CPs, the rule for the order of bookmarking of products is indicated. In most cases, dry yeast should not come into direct contact with the liquid. This manually, you first dilute the yeast in water / milk, let it activate, then knead the dough. Another principle works in HP.

Kara, this plays a role if you put the ingredients and put on the timer, or if the stove operates with a temperature equalization mode (such as Panasonic). If kneading begins immediately, then the order of the ingredients is not important.

Well, Tatyana has Panasonic.
Tatyana also did not indicate which program she baked. In addition, proofing, which is provided by the HP programs, is not enough for cake dough ...

And I several times baked cakes in a bread maker on the "Sweet" program and very much even got cakes (only the Royal Bummer all the time rested against the window. But this is most likely due to the fact that there were too many ingredients for my c / n) ...
And the experience of other bakers suggests that their ovens do a very good job with cake dough.

yes, some suspicious recipe
There is nothing suspicious in the recipe, read the cooking method.
1. Place all ingredients (except yeast) in the breadmaker's pot in the exact order indicated. Place yeast in a dedicated yeast dispenser. Place the ingredients marked with * in the special additive dispenser.
2. Install the spatula for kneading the rye dough. Select the BASIC RAISIN mode, select the crust color, size L and press the START button.
3. Put the finished bread on a wire rack and cover with a linen towel.
4. Melt the chocolate in the microwave. Decorate completely cooled bread with melted chocolate and decorate with pastry topping.Let the chocolate set, then cut the cake into slices and serve.

This is not a cake, but a cake, sugar is enough. Candied fruits and raisins add sweetness to the cake, and also decorate with glaze, it is also sweet.
There is enough liquid, 50 ml of lemon juice and 4 eggs.
Kara
Lilia, did you bake this recipe? Share your experience
liliya22
Irina, yes, I baked this cake in a Panasonic 2502 bread maker, at first when I chose the cake recipe from the book, I doubted that there was so little liquid, I wanted to add milk, but did not. The cake rose to the edge of the bucket, the crumb is excellent, sugar in moderation, I had very sweet raisins. Everyone at home liked it. Therefore, I am surprised by some negative reviews, try to bake, you will like it.
Alex100
This is a recipe from a book to Panasonic (there was even a topic on the forum for this recipe, but I didn't find something, now)
There were many discussions. Somewhere positive and negative reviews 50 * 50

Baked according to program 06 (5 hours)
I baked it myself according to this recipe. The first time it turned out was an excellent, tall Easter cake.
But another time, one might say not baked brick
Easter is just around the corner ...
There was no time for experiments, so I took the recipe from Elena (oil) and it turned out with success

You are right, you still need to keep an eye on the kolobok in HP, especially if it is pastry and even more so a cake. Let us explain your sarcasm precisely by the fact that you - Newbie

Chesslovo, I'm already afraid of Seleznev's recipes.
Ha, Man, and me too! It seems that he deliberately gives them very distorted, so that we would not have a nifiK except for feces ... I made pasta according to his video recipe, delicious cookies of course came out, but ... never makaros, and never ganache to them and the soup is sweet
I thought I was the only one so unlucky and armless, but there are many of us! We are an army of cheated housewives!

Hello! I tried to bake an Easter cake in a bread maker so as not to mess around, but the dough turned out to be watery with lumps of flour that remained (I had to stir it with my hands). The same story happens with the cupcake (recipe from the book that came with the bread maker). It seems that I do everything according to the instructions. Maybe I'm taking the wrong flour?
Elena Bo
Are you sifting flour?
Alex100
Maria2379, For a start, you would indicate the model of the stove, the recipes for what they did, how and what they measured, and the brand of flour will not hurt
Maria2379
My bread maker is like this 🔗.
Measured out with measuring spoons and a glass, which are included. Easter cake recipe:
cream - 0.75 tbsp.
draining. oil-125 g
yolks - 4 pcs.
flour - 2.5 cups (makfa, premium)
sugar - 0.5 cups
salt - 0.5 tsp.
yeast - 1 tsp (used dry Lviv)
raisins - 0.25 cups

Sifted flour, and pre-ground the yolks with sugar.
Elena Bo
How many grams of glass? By all appearances, the torment was not reported.
Maria2379
250 ml glass, did not measure in grams
Alex100
Maria2379, you get no more than 400 g of flour, of course it is not enough for such an amount of liquid
Did the cake itself rise well? considering that the dough is very rich, and the yeast is only a spoonful
(Try to take MacFoo with the letter A, the first letter that comes before the date)

I would advise you to first try this cake recipe https://Mcooker-enn.tomathouse.com/@option=com_smf&topic=3502.0.html
The recipe is proven, has been used repeatedly, the ingredients are recalculated per grams, depending on the mass of the product obtained

Maria2379
Yes, it came up perfectly and was very tasty. But lumps came across. Thank you very much, I will try!
Elena Bo
Easter cakes should always have a little watery dough, otherwise it will be dense. But, I would advise at the beginning of the kneading to help a little with a spatula to interfere with all the flour, so that there are no impurities.

Hello. I tried to bake cake without kneading from Svetlana.

In order not to spoil the food, one yolk. Divided everything into 5. I took one teaspoon of dry yeast. All stages of raising the dough were kept in the oven for the maximum specified time. For the first time in my life my dough rose! True, the smell was very strong alcoholic. After being laid out in molds, it was kept in the oven for 1.5 hours until baking. Almost did not rise. Although the previous stage with. Raisins rose very well, but as soon as it touched it fell. During baking, the roof changed from convex to flat and did not rise again. The crust is thick and very dark. The inside is soft like a sponge. No taste. Please tell me where I made mistakes. I liked the recipe very much. Everything is described in detail and there are pictures. It seems that everything was similar to me.

Good evening! Tell me what you did wrong. HP Panasonic 2511. Saf Moment yeast, flour Bereginya GOST Tambovskaya.
Yeast 2.5 tsp
Flour 510 g
Salt 0.5 tsp
Eggs 2 pcs 120 g
Sugar 100 g (I put 150, it tastes just right)
Turmeric, saffron, vanillin
Drain the butter melted 90 g
Heated milk 150 ml

Diet regimen with raisins. Before baking, I did not rise well. During kneading, there was a skirt around the shoulder blade, the dough climbed into one corner with a comma. Do I understand correctly that there should not be a kolobok for Easter cakes?
Bottom line: the roof is cracked, the top is damp, not baked.
Sat down to read the forum. If the dough does not rise, turn off the HP and further? A bucket in a warm place? Or take the dough out of the bucket? To what level must the dough rise to enable baking? Where is the cake baked better in HP or in a multicooker?
Thank you all in advance for your answers!
