Cranberry Pastila

Cranberry Pastila

Ingredients

cranberry 300
sugar 250

Cooking method

  • Grind the cranberries with a blender until smooth. Add sugar (to taste), put on fire and let it simmer for a few minutes. I cooked for 5 minutes to thicken the mass.
  • She carefully poured small portions onto the parchment-covered trays of the dryer. The layer turned out to be about 0.3 cm, dried for about 15 hours at 2 speeds. The paper is easily separated if you moisten it with water and therefore I did not grease the paper
  • Sprinkle with rusk powder, cut into strips, roll into rolls.
  • Cranberry Pastila
  • For the first time I want to try thin, dividing the mass into 2 parts
  • I have a dryer ZELMER 36Z011

Note

CRANBERRY, the fruit of the eponymous creeping subshrub up to 75 cm long with leathery oblong-ovate leaves and dark pink drooping flowers. Dark red globular very sour berries with juicy pulp and dense shiny skin.

Distributed in the cold and temperate zones of Eurasia and North America. It grows mainly in sphagnum bogs and bog bogs, in forests and meadows. It is cultivated in the USA and Canada, in small quantities in Russia.

Cranberries ripen in September, they are usually harvested in late autumn, after the first frost, or in early spring (the so-called snow cranberry is considered the best). Autumn cranberries contain 3.2% sugar (glucose and fructose) and 3% organic acids (mainly citric, benzoic, malic), 15 mg% vitamin C, which is quickly lost during storage (there is almost no vitamin C in snow cranberries), pectin, tannins and dyes. Due to the presence of benzoic acid, the berries can be kept fresh for a long time, filled with water or frozen in the refrigerator.

Jelly, jelly (the best of all jelly), fruit drink, jam - sweet for tea and sour for meat and fish dishes are prepared from cranberries, it is ground with sugar, frozen; used for pickling cabbage, in confectionery (marmalade, marshmallow) and liquor production, as well as for the preparation of extracts and jelly powder, treats "Cranberry in sugar".

Cranberries can be prepared for future use by filling them with sugar (for 1 kg of cranberries, 2 kg of granulated sugar). It is not recommended to use cranberries and dishes from it for liver diseases, gastric catarrh with high acidity and ulcerative processes in the stomach and intestines.

Gulya, DELICIOUS! And I have a lot of cranberries, and I don’t know what to do with it Sour, I don’t like
Now it will be necessary to put it on marshmallow, it will go away faster
GruSha
Tanya, thanks :)
That's lucky))) and I bought it, special for marshmallow.
Even the children ate these sweets, not very good and sour if you put a lot of sugar
poiuytrewq
... But I don't have a dryer ...
GruSha
Eugene, you can probably try it in the oven. In the summer we just dried it on the table, on large parchment. True, it does not dry as quickly as in a dryer, but the result is the same)))
I bought a dryer specially for the sake of marshmallow, although now I dry just apples (delicious apple chips are obtained), and kiwi and tomatoes.
poiuytrewq
You can try, especially a convection oven.
Can you pull a link? At least see what kind of "beast" this dryer is.
poiuytrewq
I need to see what my minimum oven temperature is in order to dry the marshmallow.
Thank you!
GruSha
Evgeniy, write then what and how

Good.

I do it from plums, apricots, apples, etc.I just cook it as long as possible, then you don't have to dry it. I just spread it on paper and leave it for a few days. sometimes I add nuts.Cranberry Pastila Well, I don't sprinkle it with powder, and if the paper is waxed, then it lags well behind without getting wet.
GruSha
so we did it before Slightly sprinkled with sugar, nuts and rolled into a roll
Omela
Oh. but I didn’t know that you were Pear.))) But here I’ll say again that the marshmallow is amazing !!!
GruSha
Oksana, thanks ;-)

Thanks for a simple recipe for disposing of winter cranberries from the freezer. My pastila is already drying. Dryer Isidri, fortunately, I bought 6 pieces of pastilles for pastilles, so paper is not needed. By the way, I'm making marshmallow for the first time, I'm even a little afraid.
Report for me!
GruSha
Hope, I hope you liked the result. !!!
Thank you for your trust :-)

Gulenka, and how many sheets of marshmallow did you get from the amount of ingredients you specified?

And from raw cranberries if you just interrupt the cranberries with sugar in a blender and immediately pour the mass into trays without boiling have you tried marshmallow?

I'm also interested in sweetness ...

Is it really sweet?
Albina
Gulsine, beautiful marshmallow

Oh, girls, and we have expensive cranberries. There is one unique place in our region - a floating peat island on the lake. As it sticks to the shore, so it will be possible to pick up cranberries, although it is very small there. We're going to visit the island this weekend. But it's a pity to dry. I freeze in case of winter diseases. I solder and feed my own.

And your child will eat such sour without sugar?
Ours will definitely not be 2 years old. And not because we gave him sugar, but simply because he does not like sour. He doesn't eat currants, likes blueberries, refuses sour apples in favor of those that are sweeter, he also takes a bite of strawberries in order to find a sweet berry. You can't deceive in any way. And we didn’t give sugar in principle, it’s just the taste preferences.
And I'll make this marshmallow with a banana, otherwise mine won't eat for sure.
