Ingredients

Welding:
Round rice 70 g
Boiling water 150 g
Chatterbox:
Water 150 g
Wheat flour (I have 1c) 100 g
Dry yeast 4 g
Maltose syrup (liquid honey) 50 g
Dough:

Vegetable oil 30 g
Sugar 60 g
Salt 12h l.
Filling:
Dried apricots 200 g
Water 200 g
Starch 20 g
Sugar (to taste) 20 g
Apricot compote for lubrication
Sugar for sprinkling

Cooking method

  • Grind rice in a coffee grinder into "flour".
  • Pour boiling water over, stir and leave to cool.
  • At the same time, prepare a chatterbox. Dissolve molasses (honey) in water, add flour mixed with yeast. Beat until smooth.
  • For dough, mix all ingredients on low speed for 2 minutes. Then knead until smooth for 7 minutes.
  • The dough is soft, sticking to the hands and the bottom of the bowl.
  • Put the dough on the table (if necessary, moisten the table and hands with oil), fold, put in a greased container, cover and leave for 30 minutes at 30C.
  • Then knead the dough, fold again, return to the container, cover and leave for 60 minutes.
  • While the dough ferments, prepare the filling. Dissolve starch in water, add chopped dried apricots, sugar, bring to a boil and cook until thickened for about 3-5 minutes, stirring occasionally. Puree with a hand blender. Cool down.
  • After a lapse of time, knead the dough, divide into pieces (I have 16), form a ball from each, cover and leave for 10 minutes.
  • Next, knead each piece with your hands into a cake, put the filling in the middle (1 teaspoon with a large slide), pinch the edges, shape a bun and place on a baking sheet covered with paper, cover and leave for 40 minutes.
  • Bake in an oven preheated to 200C for 30-40 minutes. The exact time depends on your oven.

Note

Rice tea leaves the dough soft and flavorful. The main thing is to thoroughly grind the grains into flour, avoiding grains. You can also use rice flour.
