Pumpkin spaghetti with vegetables and creamy curry sauce

Ingredients

pumpkin 300 g
pepper 1 PC
cauliflower (inflorescences) 8-10 pcs
garlic 1 clove
ginger 0.5 tsp
coconut milk 0.2 cans
Coconut oil 1 tsp
red curry paste 2-3 st. l
pepper
salt

Cooking method

  • Pre-bake the pepper and boil the cauliflower.
  • Cut the pumpkin on a Spiromat grater.
  • Preheat a skillet, add oil, garlic and ginger. Then add the curry paste and stir. Add coconut milk and bring to a boil.
  • Then add the prepared pumpkin and simmer until almost cooked, depending on preference, stirring occasionally.
  • Finally add the vegetables and simmer a little more together.
  • The cooking procedure may be different.
  • Vegetables: Do not pre-cook peppers and cauliflower, but first fry until almost cooked, then add curry and coconut milk, and finally pumpkin.
