Ingredients

flour 1 kg
warm milk 360 ml
sugar 250 g
large chicken egg - separate the whites from the yolks 4 things
butter - melt 250 g
chocolate white 150 g
lemon zest 1 tsp
vanilla 1 g
cardamom 1 tsp
salt pinch
live yeast 50 g (dry -17 g)
canned pineapples drain well and cut into small pieces 250 g
cognac or brandy 2 tbsp. l.
vanilla pudding 39 g (1 pack)
yolk + a couple of drops of ice water for lubrication 2 pcs
some light jam for lubrication
mold 20 cm in diameter with a pipe and 1 cake mold 18 cm in diameter, grease with butter, cover the bottom with baking paper

Cooking method

  • Three secret ingredients: chocolate, pudding and cognac - have changed my usual Easter cake beyond recognition, and how delicious it is with canned pineapple pieces, mmm .... I highly recommend!
  • Dissolve the yeast in milk and add flour to the consistency of sour cream, put in a warm place and let the volume double.
  • Add butter, melt chocolate, sugar, then add salt, cardamom, zest and yolks, mix well and add whites whipped until stable peaks, then add flour mixed with pudding in two steps and knead a not very thick dough. Cover and put in a warm place, let it double in volume.
  • Stir in pineapple pieces and cognac into the dough that has come.
  • Fill in the forms 1/3 and let it rise 3/4 in a warm place.
  • Grease with yolk, bake in a preheated oven at 180 "C for 45-50 minutes. Focus on your oven !!! Check for a dry speck.
  • Allow to cool and release from the mold, cover with a thin layer of heated jam, leave for 1.5 hours, then sprinkle with powder and decorate.
