Ingredients

Lamb on the bone (thigh, shoulder blade)
Beef (neck, shank)
Fresh peeled ginger 50 g
Medium carrots 2 pcs
Yellow onion medium 2 pcs

Spices (Provencal herbs) 2 tsp
Water 200 ml
Celery stalks 3 pcs
Garlic 6 teeth

Cooking method

  • 1. Wash the meat.
  • 2. Put all the vegetables in turn with the meat and.
  • 3. Add water and set the program Meat pressure 70 and 2 hours. Open after the pressure has dropped. (My jellied meat stood on heating for another 2 hours, since I could not make it out earlier).
  • 4. Disassemble the cooked meat. Strain the broth through a sieve while hot.
  • 5. Chop the garlic and chop the carrots.
  • 6. Divide the meat into molds and pour over the broth - mix by adding finely chopped garlic. The broth was about 800 ml. Due to the fact that the bones were "oily" - the broth quickly set - it was gelled.

Note

I was not going to do this kind of jellied meat specially. Many lamb and beef bones have accumulated. The bones were frozen, except for two pieces that lie on top. I did not add gelatin at all. I smell the lamb smell very strongly, so I added a lot of different spices, and there is practically no smell in the finished jelly.
