Chebureks on beer dough (Steba sandwich maker)

Ingredients

dough
egg 1 PC
beer 250 ml
Wheat flour 5-6 m. St.
salt 2 tsp
oil (any) 20-30 g.
filling:
chopped meat 250 g
onion 200-250 g
salt, spices, herbs
water 5-6 st. l.

Cooking method

  • The easiest way to make puff pastry. The secret of this dough is in the composition and in the fact that it needs to be kneaded well and left to mature a little.
  • Beat the egg with salt. Pour in beer and mix (I have my own, if purchased, then light is better). I had a lot of foam in the beer, so without foam it may be less in the volume of liquid. Pour in sifted flour (how much it will take) and 20 grams of any butter, knead the dough (I did it in a bread maker, the "Pelmeni" mode for 6-7 minutes). After a while (30 minutes) it will become a little softer.
  • Roll out, grease with oil, fold the edges to the middle twice, roll again.
  • Make minced meat for the cheburek (it should be pretty liquid). I smash everything except the meat with a hand blender, and then add the minced meat.
  • Chebureks turn out to be very airy, swollen and become soft and lush.
  • For a leaner dough, you can exclude the egg.
  • From this amount of dough, 16 pies are obtained. Divide the dough in half. Roll out so as to put the sandwich on the entire surface and then close on top. In the grooves, spread out 1 tbsp. l. minced meat, cover with the bottom of the dough, bake for 20 minutes. Remove, cut into 8 patties. Repeat. It turns out almost puff pastry, this can be seen in the photo.
  • Other available products can be used for the filling.
  • So, I also made with pumpkin + apple (100 grams each diced + 1 tbsp starch + 2 tbsp sugar + 1 tsp lemon juice), mix everything.

Time for preparing:

20 min kneading + 20 min cooking

I haven't tried it in the oven, but hardly more than 20 minutes. Maybe it's easier to fry in a pan? My friends' children invite them to their place all the time (entrance courtyard), I taught them to do it in a sandwich maker - it's really fast, in 40 minutes everything is ready.

Look carefully - there is a lot of water, little meat! Or you can do something very useful - a vegetable marrow, pumpkin, an apple ... And there is NO butter, unlike real puff pastry. More greens - tasty and without calories. Bread has been baked every day at night for 14 years (but CORRECT).

Correct - flour of 1-2 grades, whole grain, rye. Here I did it on a mixture of 1st grade + whole grain. Everything is fine, tasty, healthy, fluffy. My daughter taught me how to make such a dough, since we have been making our own beer for the third year already (it takes little time, and the result is not comparable to what is sold, the waste goes into business), so she feeds older men with pies without question. Everyone is happy - tasty, fast, healthy.
