Ingredients

Beet 1 PC. medium-sized, grams per 100
Potato 1 PC. medium-sized, grams per 100
Cucumbers, pickled or pickled 2 pcs.
Kefir 125 ml
Sour cream or mayonnaise 50 g (2 tbsp. L)
Dill, parsley, cilantro, Swiss chard, rucola, dzhusay, wild garlic, etc. - I put what I have by beam
Green onion large bundle
Egg 1-2 pcs.
Salt, pepper, sugar, citric acid taste
Garlic, if you didn't put the wild garlic 1-2 teeth

Cooking method

  • Peel the beets, pour boiling water with several grains of citric acid (they say that after boiling, you need to add citric acid and 1 teaspoon of sugar or honey, then the broth will be beautiful and transparent), boil until tender, cool in the broth, cut into thin strips and return into the broth. Grind chopped greens with salt (if you put not raw, but pickled or pickled cucumbers, take into account their salinity). Cut cucumbers and boiled chilled potatoes into cubes, chop eggs as small as possible, even grate on a wire rack. Add everything prepared to a saucepan with beets, pour in kefir and sour cream, mix, add salt if necessary. Refrigerate.

  • With raw and pickled cucumbers - a completely different taste. Mayonnaise / sour cream and a different set of herbs also change the taste.

Summer begins - and no one in our family wants a traditional hot soup ... And friends, when making arrangements for a visit, do not even ask if there is cold soup, but shout right from the gate: pour it !! (And this is not about beer!) Summer begins - we will cook. In hot weather it is really very pleasant, tasty and healthy.

The name in Lithuanian is Šaltibarščiai (shalt Ibarschai), in Latvian - Aukstā zupa. Cold borscht is prepared on beet broth and in Poland and Belarus.

In Belarus it is called Kholodnik. I was treated to this in Minsk back in the early 90s, and even with a hot Belarusian bulb! This is my dear mom, how delicious! And for over 20 years it has been our traditional summer soup. Only I replaced kefir with whey and add potatoes directly to the soup.
