Curd coconut pancakes

Ingredients

Eggs (room temperature) 2 pcs.
Curd (pureed) 150 gr.
Wheat flour 200 gr.
Sugar 4-5 st. l
Coconut flakes 3 tbsp. l
Vanillin on the tip of a knife
Baking powder 0.5 tsp
Salt pinch

Cooking method

  • Rub the curd through a sieve
  • Curd coconut pancakes
  • Beat eggs with sugar until froth
  • Curd coconut pancakes
  • Add pureed cottage cheese, stir
  • Curd coconut pancakes
  • In a separate bowl, combine the sifted flour, salt and baking powder

  • Combine both mixtures. Add coconut flakes and stir. The dough should have the consistency of thick sour cream (my cottage cheese was dry, so I diluted the dough a little with kefir)

  • Fry over medium heat, covered. (I baked in a Brand 351 pancake maker on the "troika")
