Ingredients

Dough:
dry yeast 1 tsp
wheat flour c. from 250 g
water 130 g
granulated sugar 35 g
salt 0.75 tsp
vegetable oil (odorless) 35 g
vanilla sugar 10 g
Filling:
wheat flour c. from 30 g
water 130 g
granulated sugar 60 g
cocoa powder 30 g

Cooking method

  • Dough:
  • Mix the yeast (I have a saf-moment) with flour (leave 1-2 tablespoons of flour from the total), add salt, sugar, vanilla sugar and water (unsalted potato broth can be used). Start kneading the dough.
  • As soon as all the flour is evenly moistened, stop the kneading and leave the dough alone for 15-20 minutes.
  • Add vegetable oil and remaining flour, knead into a soft dough. Fermentation for 90 minutes at room temperature, with one stirring in the middle of fermentation.
  • Filling:
  • In a saucepan, mix sugar and cocoa powder (so that there are no lumps of the latter), gradually add water. Put the mixture on fire and bring to a boil. Pour into flour, stirring vigorously.
  • Pour the mixture back into a saucepan and heat over low heat, stirring constantly, until it thickens (40-50 seconds). Cool down.
  • Dust the table with flour. Knead the dough and heat it into a layer about 5 mm thick, apply the chocolate filling.
  • Roll the layer into a roll on the short side and with a sharp knife, without pressure, cut into 6-8 "washers".
  • Transfer the dough pieces to a mold lined with baking paper.
  • Proof for 45-50 minutes under the cling film until doubled.
  • Bake in an oven preheated to 220C (convection 200C) degrees with steam for 8-10 minutes, then drop the temperature to 200C (convection 180C) degrees and bring the rolls to readiness. The total baking time for me was 30 minutes.

Well, I got such buns after molding - I rolled them in a roll along the long side so that the smaller buns were:

From myself, I can add: the dough turns out great both in work and after baking.
About the filling - I did not understand the manipulation of transferring cocoa + sugar + water into flour, and then back, so I just interfered with everything in one bucket. The filling came out like a very thick chocolate paste. Next time I'll try to add another 20 grams of water, maybe then it will be easier to smear on the dough. Cocoa took the simplest, some kind of "Russian" .... To the state of "no lumps" everything is perfectly mixed with a fork.

My oven is simple, so I baked for 10-12 minutes at the maximum temperature (about 210 C), then turned it on at about 160 C - so I had the rolls for another 25 minutes. I thought by the color that the rolls were dry, BUT the rolls turned out to be surprisingly soft and without a crust .. It's a shame to say, but yesterday I stole 3 pieces in half a day ...
In short, the rolls are very tasty !!!
