Baursaki

Ingredients

Water 1 3/4 cups
Olive oil 2 1/2 tbsp
Flour 5 cups
Sugar 2 1/2 tbsp
Powdered milk 3 1/2 tbsp
Salt 2 1/2 hl
Yeast 8 gr (1 sachet)

Cooking method

  • Baursaki is a Kazakh national dish.
  • Most recipes agree that there can be any liquid for the dough: water, milk, kefir.
  • I took water.
  • The yeast wheat bread recipe worked great.
  • Bread maker Breville (in Russia Bork).
  • I loaded everything according to the principle "flour in water". I chose the basic program for 1250 grams (the weight of the finished bread). Total time is 3 hours 10 minutes.
  • 10 minutes before the start of baking, that is, after 2 hours 10 minutes, I pulled out the dough and quickly rolled it into a cake 0.8 -1.0 cm thick. I pressed the circles with a glass, what was between the circles did not mix. The warm circles were just melting while the first portions were baked.
  • In heated vegetable oil (3 cups) I put it in small portions.
  • Baursaki
  • Baursaks are fried very quickly, it is important to turn them on time. Round ones are more difficult to turn over than non-round dough.
  • Bon Appetit!
  • Baursaki

The dish is designed for

50-60 round baursaks and about 30 small irregularly shaped

Time for preparing:

2 hours 10 minutes + 15 minutes for frying

Cooking program:

Basic

What do they look like? How are donuts? Or is it straight bread?

For donuts, it seems like butter dough is used and they taste sweeter.
It looks like pies, only without filling and such a special shape.

And this is what kind of dough you will cook. If you take bread dough, then you get bread fried in oil. Baursak recipes like pancakes (well, smaller, of course) ..... There are even options when they are hollow inside and you can bite off and add more jam inside.

Interestingly about the hollow inside ... It is necessary to make a joke in the internet. Thank you.

Girls, many of my balls just turned out to be hollow inside. Only I didn’t think to put the jam inside. Mine just gobbled up with honey and nutely.
The frying looked like this: a small, distant circle of dough was dipped in oil, the side immersed in oil was inflated in an instant, as soon as it became slightly golden in color (5-8 seconds), the baursak itself turned over to the other side, which also instantly inflated. like the first side. The whole difficulty was to turn the finished ball on the first side at the moment when the second side is beautifully fried. The photo shows that the sides of most baursaks are of different fries.
This is probably why if blanks for baursaks are made not in circles, but in polygons, then it is much easier to turn over.

The children asked what kind of animals they were, everything is much simpler - these are scraps that remained between the circles.
