Ingredients

For the test:
Eggs 4 things.
Sugar 4 tbsp. l.
Flour 4 tbsp. l. (with a slide)
Baking powder 0.5 tsp
For filling:
Natural cream 35% 200 ml
Cherry frozen 0.5 cups
Powdered sugar 3-4 tbsp. l. (taste)
Gelatin 1 tbsp. l. (no slide)
Water 1/4 cup
For smearing: (optional)
Cherry or currant jam

Cooking method

  • A very quick and tasty roll. One drawback is that the portion is small, it is done very quickly, it is eaten even faster, well, I just couldn't take a picture of this dessert, I didn't have time! ))))
  • Source: 2001 "Lush biscuits" booklet. The recipe has been slightly modified to suit our tastes and preferences.
  • So:
  • About 30 minutes before baking, pour gelatin with cold water and set aside to swell. We take out the frozen cherries.
  • Beat eggs with sugar with a mixer for about 10 minutes. Gently mix in the sifted flour with baking powder. Pour onto a baking sheet lined with baking paper, silicone or baking mat and spread in a rectangular shape. We bake in the oven preheated to 200-220 degrees for 7-10 minutes.
  • Turn the baked biscuit on a towel, roll into a roll, let cool.
  • In a water bath, dissolve the swollen gelatin, set aside to cool down to room temperature. If possible, drain the juice from the cherries, squeeze. Grind the berries with a blender. Whisk the cream and icing sugar in a separate bowl. Add the cherry puree, mix, if there is not enough sweetness, add the powdered sugar. We begin to beat our mass and gradually pour in the gelatin, without ceasing to beat. Gelatin should not be hot!
  • The filling is ready! You can put it in the refrigerator for a few minutes to speed up the process so that it grabs a little.
  • We unfold the cooled roll. If desired, before applying the cream, the biscuit can be smeared with cherry or blackcurrant jam (I do this and that, I didn't notice much difference in tastes). Apply the evenly cooled filling and wrap it gently. We put in the refrigerator for a couple of hours. When the roll has hardened, cut the edges and decorate as desired. Usually I draw a mesh with chocolate and decorate with roses from the dried cream "Wet meringue".
  • But I never manage to cool the roll, because for me this recipe is like a "magic wand" - fast and tasty! Immediately cut the edges, decorate and on the table! The roll in the photo was made in its entirety in 1 hour from the moment of the call with a prayer for the roll to the moment it was passed from hand to hand.

Also, this roll, or rather the dessert can be made in the form of a cake. The baked and cooled biscuit must be cut into strips - the width of the strip = the height of the cake. Lubricate the strips with the filling and twist upright on each other in a spiral. But for a cake about 22 cm in diameter and about 4-5 cm in height, you will need a double portion of the biscuit and filling, respectively. It turns out an unusual cutaway cake not with vertical but with horizontal layers! I did it once, decorated it with cream, unfortunately there is no photo ...
And more about the cream ..... painfully I like it (and not only me.) Therefore, I often use it in cakes in combination with chocolate cakes. And the guests liked the last cupcakes!
