Darnitsky dry sourdough bread in a Moulinex bread maker

Ingredients

Dry fast yeast 2 and 3/4 tsp.
Peeled rye flour 370 g
Wheat flour, premium 240 g
Dry sourdough Extra-R 1 and 1/2 tbsp. l.
Salt 1 and 1/4 tsp
Vegetable oil (olive) 2 and 1/2 tbsp. l.
Panifarin 2 tsp
Water 440 ml

Cooking method

  • Prepared in HP Moulinex OW612132. Program 9 - Borodino bread, medium crust. In this program, the weight is automatically set to 1.5 kg.
  • The original recipe (for Panasonic) recommended a gluten-free bread oven.
  • Bookmark sequence:
  • - water,
  • - salt,
  • - oil,
  • - starter culture Extra-R,
  • - flour,
  • - panifarin,
  • - yeast.
  • Other recipes I've seen contain extra malt. I decided to try this one.
  • My first Darnitskiy on dry sourdough. I put the ingredients experimentally (leaven - in water, panifarin - in flour). The taste of the bread is quite rye, with sourness. Next time I'll try a light crust. Additionally added 2 tsp. ground coriander. It is not felt in the finished bread.
