Ingredients

Almond 20 g
Filtered water 125 g
Flax seeds 1 tbsp. l. (9 g)
Filtered water 3 tbsp. l. (36 g)
Spelled flour 230 g
Cocoa powder 65 g
Salt 1/2 tsp
Soda 1 tsp
Refined sunflower oil 146 g
White crystalline sugar 210 g
Unrefined beet sugar 20 g
Chocolate 72% 135 g
Coconut pulp 250 g

Cooking method

  • Pour almonds with filtered water overnight, rinse. Add 125 g of filtered water to the almonds and grind in a blender (I used a multi-chopper). If you now strain the resulting mass through cheesecloth folded in 4 layers, you would get 125 ml of almond milk. And after drying the remaining cake, you would get a small amount of almond flour wholegrain unblanked. But we will skip this moment (we will not filter anything), pretend that we have already started kneading and mixed flour with milk)

  • Cooking a flaxseed egg
  • Grind flax seeds, pour 3 tablespoons of water, leave to brew for 5 minutes, until a gel-like mass is formed

  • Sift cocoa powder with flour, salt and soda. Set aside
  • In a separate large bowl, mix the butter and sugar, add the flaxseed egg and almond milk (or rather the whole almond mash).
  • Add dry ingredients to wet ones, mix.
  • Add chopped chocolate, mix. You can take chocolate drops or pieces of cocoa beans - whoever likes what.
  • Cover the dough with plastic wrap and remove for 1 hour.
  • In the meantime, you can do the coconut. Drain the coconut water, split the shell, rub the flesh without cutting the rind.   • Cover the baking sheet with baking paper, I use silicone paper.
  • Spoon a small amount of dough with a spoon, roll in coconut, forming balls.
  • Spread the balls out on a baking sheet, leaving room for flattening and spreading.
  • Bake in a preheated oven at 180aboutC for 10-12 minutes. Remove the baking sheet from the oven, let the liver grab a little, cool completely on the wire rack

I don't know how this dessert can be called a cookie ... for me it is more of a cake - so soft, tender, chewy. But that is MEGA tasty, that's for sure. Very, very, very chocolate, with a bright nutty note, for which special thanks to spelled flour, and of course coconut.
In addition, there is also a lean recipe), which is just as welcome. Highly recommend!

They say that it does not give a reaction to grain proteins, which negatively affect the body (in the most critical case, with celiac disease, they cause complete intolerance), that is, in theory, it is more useful. Then, Garnets makes a very coarse grind, when sifting, you can see a lot of large bran, and the flour itself is dark. Means, definitely more dietary.
