Lean braid with sourdough poppy seeds

Ingredients

active starter culture 100% moisture 170 gram
water 50 grams
vegetable cream (pastry whipping cream) 50 grams
yeast 5 grams
margarine without animal fats 150 grams
Fine sea salt 5 grams
sugar 50 grams
premium wheat flour 280 gram

Cooking method

  • Dough.
  • Grind yeast with flour. Mix all ingredients except margarine. Knead the dough. Stir in soft margarine gradually. The kneading was done with an ordinary mixer with dough attachments. The dough is very soft. Knead until it lags behind the walls of the pan. The dough is sticky. Place with oiled hands in a greased container and refrigerate overnight.
  • Filling.
  • I twist the poppy in a machine, such as a meat grinder, for grinding spices and cereals. Such people used to be called "Mriya". Moreover, it is not necessary to steam it. Can be twisted in a coffee grinder.
  • We take out the dough in the morning. We roll it into a layer 5-7 millimeters thick. Lubricate the surface with oil. Sprinkle with poppy seeds and sugar on top. We turn it into a roll, cut it in half lengthwise, turn the filling up and weave a braid. The molding can be viewed HERE.
  • We put in a mold covered with baking paper. Proofing in the oven with the light on took me 2 hours.
  • We bake at 200 degrees for the first 10 minutes with steam, then ventilate the oven and lower the temperature to 170 degrees. We bring it to readiness. My total baking time took 50 minutes.

Note
