Butter rolls with cream cheese

Ingredients

Dough:
dry yeast 1.25 tsp
wheat flour c. from 100 g
sparkling mineral water 100 g
sugar 1 tsp

cottage cheese 75 g
salt 0.75 g

Cooking method

  • Dough:
  • Mix the flour with yeast and sugar, add mineral water and knead the dough (kneaded in a bread maker's bucket, helping the mixer with a silicone spatula, "pelmeni" mode - 5 minutes). Fermentation - 45 minutes at room temperature.
  • Dough:
  • Add salt, sugar, mineral water, curd cheese (I had creamy Almette) and flour (leave two tablespoons of flour from the total amount) to the dough. After 7-8 minutes of kneading, add to the butter and the remaining flour. The dough is very soft, non-sticky, and does not smear along the bottom of the bucket. Fermentation for 90 minutes with one stirring in the middle of fermentation.
  • Dust the table with flour, lay out the dough, knead and divide into eight equal pieces (about 72 g each).
  • Form into round buns, transfer them to a baking paper lined baking dish, seam down. Proofing under the foil for 45-50 minutes until doubled.
  • Grease the rolls with milk before placing in the oven.
  • Bake in an oven preheated to 230C (convection 210C) degrees for the first 10 minutes with steam, then lower the temperature to 200C (convection 180C) degrees and bring the rolls to readiness. The total baking time depends on the oven, for me it was 30 minutes.
  • Grease hot rolls with melted butter, cover with linen or cotton towels and cool on a wire rack.

The source of inspiration was a braid with butter and cheese from Boris: 🔗 (I changed the recipe a bit). Since a piece of Parmesan was gnawed by my mice, and cream cheese had to be urgently attached somewhere - these rolls were born.
