Korean-style salad of dried eggplant.

Ingredients

Dried eggplants 50 g
Onion 1-2pcs
Bulgarian pepper 1-2pcs
Soy sauce 2 tbsp. spoons
balsamic vinegar (apple cider) 2 tbsp. spoons
Garlic 3 cloves
Ground coriander at will
Korean carrots

Cooking method

  • Dried eggplants are like dried apples, mushrooms are another story. They have their own taste, and the structure and taste of a dish, even a familiar one, will be completely different!
  • Dried eggplants (I dried them in circles, although it would be more correct to cut them into narrow strips and they would look better, more harmonious in the salad) for 15 minutes, pour salted boiling water (salt, so that the bitterness comes out). If the pieces are larger, then a little more time is needed.
  • Drain the water from the eggplant pieces .. Heat the vegetable oil in a pan, add chopped garlic to it (you can still use ground coriander, but I just don't like it).
  • After 15-20 seconds, add the eggplants, chopped onions and bell peppers. Fry over high heat, stirring constantly, for a couple of minutes.
  • Pour in vinegar and soy sauce. Stir and turn off. Leave to infuse and cool under the lid.
  • Also, what we need for the salad is Korean-style carrots. It's great if you have one. I usually don't, but I always have a bag of ready-made Korean Carrot Seasoning. Sharp "(sold in stores).
  • I rub the carrots, add and hammer them lightly. I leave it for 10-15 minutes. If a miracle happened and the carrots are juicy, then I just drain the juice, but I don’t squeeze it out ... it will not be tasty later.
  • I heat the sunflower oil in a frying pan and add the required amount of seasoning there. It's a matter of taste - who loves what kind of spice. I sprinkle less than recommended, do not do it too sharp. It is in hot oil that the seasoning reveals its taste!
  • I stir for about five seconds, carefully pour in the vinegar, immediately turn it off and pour this tingling, squealing, fragrant mixture into the carrots. Mix thoroughly and leave to brew in a cool place. (If the carrots are not at all sweet, then adding a little sugar will not hurt at all)
  • You can prepare the main course in parallel.
  • Then mix the cooled eggplants with the Korean carrots (mine, freshly prepared express carrots by that time had also cooled down)
  • And Bon Appetit.

I used to just dry in the sun. I cut it as I need it and dried it. They dried up quickly, there was little moisture, not like in apples.
I forgot to write that I cut and laid it in one layer on the surface of covered with gauze and covered it from above from flies. I didn't dry it like mushrooms on a string.

P.S I also dried in the sun until last summer. on the balcony. I cut it into circles and ... I saw it two years ago on a trip. that you can cut the eggplants lengthwise into 4-6 parts and string such long slices on a thread / string and hang to dry I tried at home, of course - for such large pieces it is normal, you do not need to turn it over, blown from all sides, and quickly ... it didn't suit me - it's quick in the summer, and in the winter - to soak it off, and then I also need to cut it, but I'm too lazy and returned again to the circles, I am a lazy

I had frozen peppers, we don't buy soy sauce and I added homemade apple cider vinegar. I have it gorgeous, I make it only from juice, without adding water. I have eggplants without bitterness, I added fried coriander, chopped. Great salad!
