Gerbeau cake

Ingredients

Dough:
butter (margarine) 200 g
wheat flour c. from 400 g
yolks 2 pcs
milk 80 g
granulated sugar 20 g
baking powder 1 tsp
pressed yeast (or dry) 10 g (1 tsp)
Filling:
walnuts 250 g
apricot jam or confiture 250-300g
granulated sugar 150 g
vanilla sugar 10 g
Glaze:
chocolate 70-75% 150 g
butter 50 g

Cooking method

  • Dough:
  • Beat the softened butter or margarine with sugar and yolks (in the original recipe - one whole egg, but I liked the dough on the yolks more, it turns out more tender).
  • Add flour, sifted and mixed with baking powder.
  • Dissolve yeast in lukewarm milk, pour (into the dough) and knead into a soft dough.
  • Divide the dough into three equal portions.
  • Filling:
  • Combine nuts, sugar and vanilla sugar in the bowl of a food processor or blender. Grind in "pulse" mode into small crumbs.
  • Cover the mold (19x25 cm) with baking paper.
  • Roll out each part of the dough to the size of the mold.
  • Transfer the first layer of dough into the mold with a rolling pin. Brush with apricot jam, sprinkle with nuts.
  • Repeat the same with the second layer of dough.
  • The third, last cake, prick with a fork.

  • Leave the cake at room temperature for 15-20 minutes.
  • Bake in an oven preheated to 200C (convection 180C) degrees, 25-30 minutes until light golden brown, until "dry match".
  • Put the pie pan on the wire rack and cool completely (if the pan is detachable, remove the sides).
  • Glaze:
  • Melt the chocolate in the microwave or in a water bath with butter (in the original recipe - 200 g of chocolate) and apply to a completely cooled cake. Allow the chocolate mass to cool and cut the pie into portions.
