Quiche with salmon and broccoli

Ingredients

flour, premium 200 g
butter 120 g
yolk 1 PC.
salt 0.5 tsp
salmon (hot smoked fillet) 300 g
broccoli 300 g
Mozzarella 70 g
Parmesan 30 g
cream 10% 250 ml
egg 1 PC.
salt, nutmeg taste

Cooking method

  • I decided to bake a traditional French pie, the quiche turned out, I would say, festive and very, very tender, bright and everything we love - a thin layer of crispy dough and a lot of delicate colorful filling.
  • Cut the cold butter into cubes. Combine flour and salt in a food processor (blender with a bowl), add oil and pulse until crumbly. Add the yolk, stir quickly, roll the dough into a ball, wrap in plastic wrap and refrigerate for at least 30 minutes.
  • Boil broccoli in boiling salted water for 3 minutes, cool and disassemble into inflorescences. Cut the salmon into small pieces. Cut the mozzarella into pieces. Beat the egg lightly with cream, add nutmeg, salt.
  • Distribute the dough in shape (22-25 cm), making rather high sides. Arrange the filling (salmon, broccoli and cheese) at random. Fill gently with the egg-cream mixture.
  • Place the pie in preheated to 170 gr. oven. Bake for about 35-40 minutes, about 5 minutes until tender, when the filling hardens, sprinkle the pie with finely grated Parmesan, let it brown.
  • Allow the pie to cool slightly before cutting.

Thanks for the recipe. I also baked the quiche earlier in a different way, but I liked this one. It didn't work out with salmon, I had to put smoked chicken. There will be an opportunity, I will definitely try with salmon. I liked the dough very much! True, without adding water to the ball it did not roll and I added 1 more egg to the filling.
