Ingredients

Coconut pulp 90 g + 45 g
Milk 3.2% 100 g + 240 g
Eggs 2 pcs (108 g)
White crystalline sugar 2 tbsp. l. + 70 g
Salt 0.5 tsp
Vanilla extract 1 tsp
Carbonated mineral water 150 g
Kefir 3.2% 510 g
Refined sunflower oil 4 tbsp. l.
Pasty cottage cheese 5% 400 g
Lemon (zest) 1/2 pc
Canned pineapple 6 rings
Wheat flour, premium 400 g

Cooking method

I did not use mixers or combines, the whisk coped with it quickly and easily. Leave the dough to brew for 15-30 minutes, bake over medium-high heat (I have 6 out of 9max)

Pancakes with a clear coconut aroma and neutral in taste, this is how the sweet filling was planned. If you bake them independently, then the amount of salt / sugar must be adjusted.

I took 1 coconut weighing 264 g, without the shell, the weight turned out to be 164 g. I cut the brown peel separately into porridge, the rest is here
