Oat bread

Ingredients

Wheat flour 225 g
Oat flour 40 g
Hercules flakes 4 tbsp. l.
Milk 220 ml
Salt 1 1/2 tsp
Sugar 1 1/2 tbsp. l.
Olive oil 2 tbsp. l.
Dry yeast 1 1/4 tsp

Cooking method

  • Baking size M, next in line the largest. At first it seemed that the liquid was too much, but did not add flour, and did the right thing, by the end of the batch the bun leveled off

Note

Yesterday I was looking for a recipe for oat bread, but I could not find a suitable one (maybe I did not look there, a beginner yet) ...
And I really wanted bread ... So I took the recipe from the instructions for my stove, changing it a little ... Usually I put the bread in the candles, followed the bun and sleep + the timer under the pillow to take out the bread So the timer sounded at 12 at night and went to turn off the stove, looked in and was a little upset ... The bread did not rise very much (compared to wheat, and I never baked it for a small portion) ... And in the morning a miracle, I have not yet baked so tasty

Svetik S I've baked your bread now ...... put it on the average size, yes of course .... it doesn't rise like the rest, but still it's a handsome man .... the smell just drives me crazy, it gets cold. I will post the picture will cool down ..... it turned out so beautiful, I went up for oatmeal well

I almost always bake bread with oatmeal. If in this recipe you replace half of the milk with whey or potato broth and add 1 full, heaped tablespoon of gluten, bread
will rise "above the roof".

The photo can be viewed HERE.

Stеrn I baked on whey, the last time I just got hooked on it, I don't bake any bread without it, and I added 2 tsp panifarin, well, on the one hand, it did not form so beautifully, but the result is very cool, I yesterday I could not resist and tried almost for the night, finally awesome

Is it possible to replace milk in baking with whey ??? Otherwise, I don't have milk and I don't want to run after it, but I have kefir and whey, because I’m always present in the house.
Stern
Svetik_ , sure you may! No doubt about it!
Only the kolobok will have to be followed. Milk is thicker than whey, after all.
Or you can 50:50 kefir and whey.

Two questions:

1. Are Hercules flakes oatmeal?

2. Confused by the total weight of flour in the size of M - 265g. The figure 300g comes to mind - the minimum dose for this CP.
Svetik_
I made ordinary Hercules, oat flakes for size L 300g. flour

I prepared according to your recipe, medium size, added 1 tbsp. l gluten, cooked in water, rose so-so, but it turned out very tasty.

He doesn't rise very much ....... but really delicious

The oats are not heavy, the products are different. It was just necessary to add flour to a normal kolobok.

Svetik S, just thank you so much for the wonderful bread recipe !!! It turned out to be light and airy, surprisingly. I added a couple of tablespoons of olive oil and 1 tbsp. l. with a mountain of gluten. Husband - the fastidious appreciated perfectly!

I decided to bake this bread. Right now the dough is being kneaded, but I see that the bun is thin, like a cake. I am thinking about adding flour or whether to wait until the flakes swell. Maybe someone experienced will tell you what to do?
tormented, tormented and already added. A couple of minutes after the batch ended. Now I will wait for the result, then I will report back.
........................ ...........

The bread is wonderful! Sorry, I can't post a photo, I'll try again later. I baked a little loaf, it's gone. I'm going to bake again for supper - now it's big. Thanks a lot for the recipe - our family loved it. Thanks to Stеrn for the prompt help!

Hurrah! The photo was inserted, only a photo from the phone was not very good. This is the second bread, the roof has fallen slightly. The first was prettier.

Oat bread.
Recipe from LG stove book, revised.

Roll 680 gr.
1 cup water and 2 tbsp. l.
Wheat flour 3 cups
Salt 1.5 teaspoons
Butter 2 tbsp l.
0.25 cup honey
Powdered milk 2 tbsp. l.
Oat flakes 0.75 cups (I used Uvelka flakes that did not require boiling)
Yeast 1 tsp

"White bread" mode (at Klatronic # 2).
The crust is light.
When baking began, my bread still rose, so you can cut the top with a sharp knife before baking, so that the top does not tilt.
It's even better to look behind the kneading, I had to add flour (but I have a smaller clathronic cup than LG).
I have a 230 ml Clathronic cup.
This recipe for an LG stove has a 240 ml cup.
I measure the liquid on the basis that a cup is 240 ml, and I calmly measure bulk products with my cup, since it is still not very accurate to measure with a cup.

Delicious soft bread with a honey smell came out, a little sweetish.

svet_ik, and in the photo a round loaf was baked in the oven?

Good day. I wanted to clarify - two more spoons - this is for the already existing two? Everything else (primarily the amount of flour one and the second) is exactly according to the recipe - a little confused by the number of gr.?
Thanks for the answer.

P.S. A question for everyone - enlighten pliz, a newbie who has made only one acquaintance with the bread maker so far - the child is allergic to wheat. flour - is it possible to proportionally change the ratio of oat and wheat flour (if so, in what framework and do I need to add something at the same time) and is it possible to use coarse wheat flour, or is it better to use the premium? And milk - if not cow's, but goat's?
Thanks in advance for your reply
