Ingredients

For option 1:
Sauerkraut 750-800 g
Mixed minced meat
(frozen) 250 g
Carrot 1 PC.
Seasoning for minced meat 1 tsp
Water 2 tbsp. l.
Salt 0.5 + 0.5 tsp
Tomato ketchup 2 tbsp. l.
Sugar 1 tsp
Bay leaf 1 PC.
Olive oil 2 + 2 tbsp. l.
For option 2:
Sauerkraut 700 g
Fresh cabbage 300 g
Frozen minced meat from 250 g
Carrot 2 pcs. (120 g)
Salt 0.5 + 0.5 tsp
Tomato ketchup 3 tbsp. l.
Sugar 0.5-1 tsp
Vegetable oil 2 + 2 tbsp. l.
Bay leaf 2 pcs.
Hmeli-suneli 1 tsp
Water 2 tbsp. l.

Cooking method

  • It is not always possible to use meat when stewing cabbage.
  • In this recipe, I tried to show how you can replace it with minced meat pieces. The dish will cook faster, but it will be no less tasty and satisfying.
  • I offer 2 options. Option 1 is good if the cabbage is not too sour. Option 2 can be used when the cabbage is already acidified. After stewing, it will be even more sour, so I add fresh one.
  • Frying at the end of cooking not only improves the taste of the dish, but also gives the cabbage a beautiful ruddy color.

  • Put a layer of frozen minced meat on a board. Sprinkle with seasoning. Let sit for 5-10 minutes and cut into 2x2 cm cubes

  • Turn on "Frying" mode, pressure - 3, pour 2 tbsp into a saucepan. l. oils. Fry the minced meat cubes until golden brown (this will prevent the minced meat from falling apart after stewing). Season with salt (0.5 tsp). Roasting takes about 2-3 minutes.
  • Disable the program.

  • Put the cabbage squeezed from the brine, mixed with grated carrots into the saucepan of the pressure cooker for the minced meat. Pour in 2 tbsp. l. water.
  • Close the cover, set the valve to the "Pressure" position.
  • Extinguish on the program "Porridge" 10 minutes at a pressure - 3.
  • Relieve pressure forcibly after 3-5 minutes of "Warming up".
  • Drain off any liquid that has separated.

  • Turn on Fry program, pressure - 3.
  • Stir the cabbage so that the minced meat does not remain at the bottom.
  • Evaporate the remaining water. Then add oil, ketchup and salt (0.5 tsp) and fry the cabbage until golden brown, stirring occasionally. (This takes 12-15 minutes.)

  • Add bay leaves at the very end. Close the lid for 5 minutes.
  • Serve with potatoes or sour cream.

  • Option 2. (For very sour cabbage.)
  • Put the frozen minced meat on a board, sprinkle with minced meat seasoning. Let sit for the time during which you will prepare cabbage and carrots.
  • Cut fresh cabbage and carrots (grate) into strips.

  • Stir and rub lightly with salt (0.5 tsp).
  • Squeeze sauerkraut from the brine, rinse very sour cabbage with boiled water and squeeze. Add sugar, mix well.

  • Cut the minced meat into 2x2 cm cubes
  • Fry it with 2 tbsp. l. oils on the "Fry" program at a pressure of 3 to a ruddy color. Salt towards the end (0.5 tsp).
  • Put sauerkraut to the minced meat, fresh cabbage with carrots on top. Pour in 2 tbsp. l. water.
  • Cook on the program "Porridge" 10 minutes at a pressure - 3.
  • Open 5 minutes after the end of the program by forcibly relieving pressure.
  • Drain the water.

  • Turn on "Frying" mode pressure - 3. Evaporate any remaining water. After mixing, move the minced meat from the bottom up.
  • Add oil (2 tablespoons), ketchup, salt (0.5 teaspoons). Fry, stirring occasionally, until golden brown.Toward the end of the frying, add the suneli hops and bay leaves.
  • Serve as a separate dish.

Lena, difficult tasks you have to solve.
As far as I understand, you have Georgian cabbage? Have beet slices added to it? Ideally, such a cabbage would go well with cabbage soup or borscht. Cut the beets into cubes and cook according to your favorite recipe.
And if stewing according to this recipe, then I would choose option 2, with the addition of fresh cabbage and carrots. The sauerkraut would be drained (it may be necessary to rinse it), cut with the usual strips for stewing and then act according to the recipe.
Such is the disposal plan.
