Marble Brioche Buns with Matcha Green Tea

Ingredients

Matcha tea brew
milk 80g
egg 1 PC
sugar 55g
wheat flour 20g
matcha tea (or cocoa) 10 (15) g
butter 15g
Dough
wheat flour 300g
sugar 65g
milk 155g
egg yolk 1 PC.
fresh / dry yeast 10g / 4g
butter (room temperature) 50g

Cooking method

  • Matcha tea brew
  • 1. Boil the milk.
  • 2. Beat the egg with sugar until well mixed (whisk without fanaticism)
  • 3. Mix flour with matcha tea.

  • 4. Add the flour mixture to the egg mixture. Stir until smooth.
  • 5. Pour milk in a thin stream, stirring constantly.
  • 6. Put on low heat again and cook until the mixture thickens.
  • 7. Finally add oil and stir until the oil is completely dissolved.

  • 8. Cover with foil or lid and leave to cool completely.
  • Dough
  • 1. Dissolve yeast (fresh) in warm milk. Add 1 tbsp. l. Sahara. Leave on for 10-15 minutes.
  • 2. Add all ingredients except oil. Knead until smooth. Then add butter in flakes.
  • 3. Knead for about 15 minutes. (The dough will look smooth and shiny.)
  • 4. Place the dough in a container and leave to rise at room temperature for about 2 hours.

  • 5. Then knead the dough. And shape the buns this way:
  • Roll out with a rolling pin into a rectangle.
  • Place the dough with tea in the middle.

  • Roll out with a rolling pin

  • Then cut into equal parts and fold into a greased form.

  • Leave to proof for 50-60 minutes.
  • Bake in an oven preheated to 180C for 25-30 minutes.
  • Cool the finished buns.

In small quantities in baked goods, it gives such (in my opinion) a refreshing aftertaste. And in this recipe, I also reduced its amount, because in the larger one it was very much felt.
