Then I put the kiwi in a warm (not hot syrup, otherwise the kiwi color changes) and, when it cools down, put it in the refrigerator. Kiwi produces juice, so there is enough liquid. I stir periodically, the syrup should be thick, viscous, therefore, if the kiwi is sour and the syrup is like a compote, you can add more sugar there. Otherwise, they will be sour after drying. I insist for a day, then gently transfer it to colo-slag before drying, let it drain and dry. And we dilute the syrup with water and drink it as a compote. The amount of sugar depends on the kiwi. I had unripe, sour. Therefore, I immediately put a pound of sugar. And somewhere I made kiwi for 2.5 kg. Then, in this syrup, another 2.5 kg of kiwi, but with the addition of sugar. In principle, everything is to your taste.
