Pancakes with ricotta and lemon

Ingredients

Wheat flour, premium 250 g
White crystalline sugar 45 g
Baking powder 2 tsp
Baking soda 1/4 tsp
Salt 1/2 tsp
Ricotta 250 g
Cow's milk 2.5% 240 g
Choice chicken egg 3 pcs (168 g)
Vanilla extract 1/2 tsp
Lemon (zest and juice) 1 PC
Refined sunflower oil 2 tbsp. l.
Frying oil

Cooking method

  • Sift flour, add sugar, baking powder, baking soda, salt and mix.
  • In a separate bowl, whisk together milk, ricotta, eggs and vanilla extract. You don't need a mixer or blender - a fork or whisk is enough.
  • Remove the zest from the lemon (only the yellow part), squeeze out the juice. I also needed juice for another recipe, so I took the zest of 2 lemons in the pancakes, and the juice of only one. The lemons were not the largest, the juice was about 40 g.
  • Add the zest and juice to the milk mixture along with the butter, mix. The dough may curdle slightly - this is normal.
  • Combine everything with flour, mix. You do not need to knead thoroughly and until smooth, just mix until there is no dry flour. The dough will be rough.
  • Bake in a preheated skillet over medium heat (I set the heating to 6 out of 9, poured out 60 ml in a scoop - it turned out 3 pieces in a frying pan with a diameter of 26 cm) until bubbles appear on the surface and the bottom is browned. Turn over and cook until golden brown on 2nd side.
  • Serve warm with lemon curd, honey, maple syrup, jam.

At the same time, I do not pretend at all that my version is tastier, but that's exactly how it seemed to me more interesting. Or the number of products in stock often influences changes
