Dry white wine 150 ml
Water 420 ml

Pepper taste
Wheat flour 25 g
Breadcrumbs
Frying oil
FOR PEAR SAUCE
Pears 2 pcs (270 g)
Vanillin pinch
Coarse sea salt taste
Olive oil 2 tbsp. l.
Butter 1 tbsp. l.
Honey 1 tbsp. l.
Thyme (preferably fresh) 1 tsp

Cooking method

  • 1. Pour olive oil and butter into a large frying pan and heat. Pour rice (I had only steamed at home) and fry for 2-3 minutes, stirring constantly. Pour out a third of the wine and a third of water (according to the recipe - meat broth, but according to the terms of the competition, I cannot use meat). Stir occasionally until the liquid is absorbed. The rice should boil, but not too much. Salt. Add another 50 ml of wine and 140 ml of water. Stir again periodically. And another such stage. The rice should be a little raw somewhere in the deepest part. Then you can turn it off. The amount of liquid may vary. Cool risotto.

  • 2. Add flour to the risotto, then cheese (I have "Feta") and spices, finely chopped garlic and mix. Form cutlets (I got 10 pieces with a diameter of 5 cm), roll them in bread crumbs and fry on a vegetable mala for a few minutes on each side. Place on a paper towel to absorb excess oil. Serve hot with pear sauce.

  • Heat a small skillet. Pour olive and butter there, add vanilla and salt. Roast the chopped pears for about 5 minutes until soft. Pour in honey, stir. Pour thyme (I have dried), simmer for another 2 minutes. The sauce is ready!
