Cooking method

  • In the evening before baking, knead the biga: knead flour, yeast and water until a homogeneous bun is formed. The dough will be sticky but firm. Place in a container and leave at 24C for 12 hours.
  • Main dough
  • on the day of baking, combine dry ingredients: flour, salt, yeast, milk powder. Combine water, olive oil and flour (40 g of total) in the bowl of the food processor. Beat with a whisk until a frothy suspension forms. Then add dry ingredients and bigo. Using a hook, knead the dough for 6 minutes. The dough should look smooth and smooth.
  • After kneading, the dough should rest for 1 hour and 15 minutes in a container with a lid.
  • Then put the dough on the table, divide into 3 parts, roll into rollers. Rest for 10 minutes.
