Pina colada cake

Ingredients

Biscuit:
Eggs 3 pcs.
Sugar 90 g
Flour 90 g
Coconut flour 30 g
Pineapple interlayer:
Pineapple puree 300 g
Sugar 100 g
Juice and zest of half a lime
Light rum (BACARDI) 1 tbsp
Agar agar 5 g
Coconut cream:
Coconut milk (2.5%) 250 ml
Eggs 1 PC.
Corn starch 30 g
White chocolate 50 g
Cream 33% fat 200 g
Sugar 75 g
Instant gelatin 5 g
Light rum (BACARDI) 2 tbsp
Pineapple mousse:
Yolks 2 pcs.
Sugar 45 g
Pineapple syrup 65 ml
Protein 2 pcs.
Sugar 75 g
Cream 33% fat 100 g
Pineapple puree + zest and juice of half a lime 50 g
Instant gelatin 15 g
Light rum (BACARDI) 1 tbsp. l.
Impregnation:
Pineapple syrup 100 ml
Light rum (BACARDI) 50 ml

Cooking method

  • Biscuit:
  • Beat eggs with sugar into a fluffy, creamy mass (beat for 12-15 minutes). Mix both types of flour and add to the egg mixture in 2-3 doses. Put in an oven preheated to 170C and bake until a dry skewer. The height of the finished biscuit is 2.5-3 cm.
  • Pineapple interlayer:
  • Put the pineapple pieces on a sieve and let the syrup drain, then puree and separate 300 g from the total mass. Transfer the puree to a saucepan, mix with juice and lime zest and heat to 45-50C. Add agar-agar mixed with sugar, boil everything together for a couple of minutes. Remove from heat, pour in rum. Pour the resulting mixture into a mold with a diameter of 18 cm (line the bottom with baking paper) and leave to set.
  • Coconut cream:
  • Beat the egg lightly with 50 ml of milk and cornstarch. Bring the remaining milk with sugar to a boil, combine with the egg mixture and simmer over low heat until thickened, allow to cool completely. Melt the white chocolate in 100 ml of cream, and cool completely. Whip the remaining cream, soak the gelatin in the rum. Combine the custard base, gelatin and creamy chocolate mixture. Whisk everything together until smooth and add the whipped cream in several steps.
  • Impregnation:
  • Mix pineapple juice with rum.
  • Assembly (1st stage):
  • Next, cut the biscuit into two cakes and soak. Put half of the cream on the first cake, then put the frozen layer and the second half of the cream. Cover with a second crust and refrigerate.
  • Pineapple mousse:
  • Whisk the yolks, 45 g sugar and pineapple syrup in a water bath until thick and increase in volume by 5-6 times. Set aside for a while. Put the whites with the remaining sugar in a water bath, warm up to about 45C and beat for 2-3 minutes. Then remove the container with proteins from the heat and continue whisking at maximum speed for another 5-7 minutes. Finished proteins are very thick, cooled down during whipping to room temperature. Squirrels are also set aside for a while.
  • Combine the remaining pineapple puree with rum, juice and lime zest and dissolve the gelatin in this mixture. Add the prepared mixture to the yolk mass, combine with the whipped egg whites. Add whipped cream last.
  • Assembly (2nd stage):
  • Take the cake out of the refrigerator, spread the cake ring 1 cm in diameter and lay out the mousse. Put the assembled cake in the refrigerator for final solidification overnight. Then remove the cake ring and decorate as desired.
