Chocolate pancakes with soufflé

Ingredients

Dough:
wheat flour 95 g
cocoa powder 3.5 tbsp. l
sugar 1.5 tbsp. l
eggs (large) 2 pcs
milk 250 g
dark beer 3 tbsp. l
butter 30g
Souffle:
chocolate 60-70% 100 g
eggs 4 things
sugar 4 tbsp. l
vanilla sugar 1 tbsp. l
salt pinch
lemon acid pinch

Cooking method

Combine flour and cocoa powder, sift into a large bowl, add sugar and stir.
In another container, lightly beat the eggs with milk, then add beer (I had a light one), at the end add melted and cooled butter.
Pour the liquid mixture into a bowl of dry ingredients and stir with a whisk until smooth. The dough is very thin. Cover the container with plastic wrap and refrigerate overnight (maximum 3 days).
Chocolate pancakes with soufflé
In the morning, take the dough out of the refrigerator; it should have the consistency of cream and pour easily from a spoon.
Bake pancakes on both sides in a well-heated and greased frying pan with a thin layer of oil. Put each ready-made pancake in a pile on a plate, sprinkle it with a thin layer of powdered sugar. From this amount of dough, 10-12 pancakes are obtained.


Souffle


Melt the chocolate in the microwave or in a water bath, cool.
Separate the whites from the yolks.
Beat the yolks with 2 tbsp. l sugar, add chocolate to them and mix.
Beat the whites on a high speed mixer until light foam. Add a pinch of salt and citric acid. Beat until dense foam, pouring in 3 tbsp little by little. l. Sahara. Whisk until firm, glossy peaks.
Gently pour the whipped whites into the chocolate mass. Try to keep the proteins from settling. You can use it immediately, but it is better to keep it in the refrigerator overnight, the mass will become more airy.

Assembly


Chocolate pancakes with soufflé
Place a chocolate pancake on a serving dish (heat-resistant) (I covered the baking sheet with baking paper and put the pancakes on it). Put 1.5-2 tbsp on one half of it. l soufflé. Cover with the other half without pressing.

Bake in an oven preheated to 180C for about 15 minutes. The soufflé should rise and go slightly beyond the pancake boundaries.
