Ingredients

water 125 gram
flour 1 grade 310 gram
wheat sourdough 50% moisture 75 gram
fresh yeast 5 grams
unfermented malt 37 gram
syrup 12 grams
Fine sea salt 10 grams

Cooking method

  • Leaven.
  • I fed it once in the evening 10 hours before baking.
  • 20 starters + 20 water + 40 flour.
  • Dough.
  • I kneaded all ingredients except salt in a food processor with a hook for eight minutes, then added salt and knead for another 5 minutes.
  • Fold the dough into a container and leave to ferment for 90 minutes. After 45 minutes, stretch - fold.
  • Form bread of any shape. I have proofed on parchment for 65 minutes.
  • Preheat oven to 220 degrees. Make cuts before planting. She baked on a stone. First 20 minutes with a cap. Then another 10 minutes, lowering the temperature to 200 degrees.
