Ingredients

Butter 65 g
Sugar 100 + 70 g
Overripe banana (weight in peel) 280 g
Wheat flour (I have 1c) 150 + 50 g
Vanillin 1 \ 4h. l.
Baking powder* 2h l.
Soda 1 \ 3h. l.
Boiling water 65 g

Cooking method

  • Mash banana in mashed potatoes. I forgot to weigh the net weight.
  • Pour 100 g of sugar into a bowl with a thick bottom, put on the fire, when it starts to darken, stir until the sugar is completely dissolved.
  • Add oil, stir, boil for a few seconds and remove from heat.
  • After 30 seconds, when the boiling stops, add the banana puree and stir vigorously so that the banana mixes well with the caramel. If the caramel begins to thicken, put the pan on the fire. At this stage, I transferred the mixture to the Thermomix and whipped in it, because I could not achieve a uniform consistency with my hands.
  • Add 150 g of flour to the mixture, mix. You should make an butter custard.
  • Pour in boiling water, stir. The dough should turn out to be liquid, pouring from the spoon with a ribbon.
  • Stir in 70 g of sugar (I forgot) and vanillin.
  • Leave to cool until warm.
  • Pour in the remaining (50 g) flour, mixed with baking powder and baking soda.
  • * I poured in 5 g of homemade baking powder, while not using soda.
  • Mix. You should get a thick dough with a spreadable consistency. If the dough is liquid, add flour.

  • Place the dough on a baking sheet lined with paper. You can spread it with a spoon or deposit it through a pastry syringe or bag.
  • Bake in an oven preheated to 180C for 15 to 30 minutes. The time depends on the size of the cookie. After 30 minutes, the cookies did not want to redden, and I set 200C for 7 minutes.

  • Lean recipe from the good-cook website. I replaced vegetable oil with butter. It turned out to be very aromatic and tasty.

As for the yeast, it’s just a matter of personal preference, and of the peculiarities of the recipe. At the beginning I only baked fresh, then only dry. And now I bake in the author's version.

But it looks like the bust came out with boiling water, because all my cookies spread out and there was practically no pattern left. I set an asterisk with a nozzle, before baking they were shaped like marshmallows. Here's what happened
