Ingredients

Flour 350 gr.
Milk 150 ml.
Room egg temperature 1 PC.
Yeast Saf-Moment 1 tsp
Sugar 3 tbsp. spoons
Salt 0.5 tsp
Ground cinnamon 1/4 teaspoon
Ground nutmeg At the tip of a knife
Butter 60 gr.
For jam:
Carrot 400 gr.
Sugar 1 stack (200ml.)
Water 90 ml.
Lemon with zest 1/3 lemon

Cooking method

  • The owner of the recipe with a mysterious name suggested to me to upload my version of this wonderful fender. SANADORA! Which means "Manya" in translation. Hi Manyun!
  • So, add sugar, yeast, egg and salt to warm milk. There are also cinnamon and nutmeg. We mix. We remove 2 tablespoons from the total amount of flour and set aside. Add flour to the milk mixture and mix well. We leave for ten minutes. Then add the remaining two tablespoons of flour and softened butter. Knead soft dough. We cover it with foil or put it in a bag together with a bowl and put it in the refrigerator overnight. I must say that long standing in the cold for this test is mandatory. I tried to save time, and came to the conclusion that even 3 hours is not enough. Everything seemed to be baked and delicious, but not perfect. And we all, in fact, gathered at the "Mcooker" so that we have everything as cool as possible! Isn't it true?

  • Now we need to make some kind of jam. To do this, rub the carrots on a coarse grater and put them in a saucepan with a non-stick coating. Add water and sugar there. Stir, put on fire and wait for it to boil. Then close the pan with a lid and cook over low heat for 20 minutes, stirring occasionally. Next, add the lemon, finely chopped together with the zest

  • and cook for another 15 minutes.
  • We watch carefully so that it does not burn. If, at the end of cooking, not all of the liquid has evaporated (it depends on the carrot), then without a lid, stirring, evaporate until thick. There should be only a carrot with lemon, no liquid. That's it, the jam is ready. Let us cool it down.
  • We take out the dough from the refrigerator. The main recipe recommends letting the dough warm at room temperature for 40-60 minutes. But personally, it is more convenient for me to work with cold dough. It is not so delicate and does not pretend to be touchy, but obediently allows you to make various "pretzels" with you. I just put it on the table and let it soften for 5 minutes.
  • Now we roll out a layer 25x40 cm in size with the long side facing us. We distribute the filling. Here, look, there is absolutely no juice left in the carrots:

  • Now we roll up the roll. Its length is 40 cm. We blind one end and, stepping back from it a couple of centimeters, cut the roll in half. Turn the filling up:

  • We put the finished fenders in a baking dish, greasing it with vegetable oil.

  • I have a shape measuring 31x11 cm. The Kranz is elongated. But it can be baked in a 22x12 cm shape, as Manya does. Yes, at least you can make it round if you really want to.
  • Now we cover the form with a film or put it in a bag, and give our fender a proper distance. Not less than an hour. He's cold here, remember? And if you allow the dough to warm up before molding the fender, then you can let it stand for 35-40 minutes. Quite enough.
  • I bake this kranz at 180C for 30 minutes, then lower the temperature to 160C and bake it for another 10-15 minutes. But, in any case, everyone operates with the capabilities of their oven. Select the setting you would normally use for sweet and savory pastries.
  • So, the fender is ready!

  • Let it cool down a bit so as not to get burned and, holding the form with one hand, turn the fender over to the other hand (well, or just shake it out, after all, from there, I'm tired of explaining!). And then we put it on the wire rack until it cools completely.

When you treat someone to pastries with sweet carrots, you must hear: "Oh, what delicious dried apricots you have, did you add a lemon there?" It never occurs to anyone that this is the most ordinary carrot! Since more than two decades, my mother first prepared this "jam" for Easter rolls, dried apricots were no longer bought for baking!

P.S. Making some additions! Mom says that I do not cook carrots quite right. It turns out that it, like the dough, needs to be left overnight. That is, three carrots, add water and sugar, mix and leave. And in the morning we cook over low heat for 40 minutes, then add the lemon and cook for another 20 minutes. Just an hour. This is such a carrot - the most correct dried apricots! (Without any hint of the taste or smell of carrots)
