Fried pies with potatoes

Ingredients

For the test:
Wheat flour 1 kg
Rast. oil 4 tbsp. l.
Egg 1 PC.
Water 1/2 tbsp. + 100 ml
For filling:
Potatoes 1 kg
Large onion 1 PC.
Butter 50 g
Salt
Ground black pepper taste
Rast. deep fat oil 200 ml

Cooking method

  • Peel the onion, chop finely, fry in butter until golden brown. Boil peeled potatoes until tender. Drain the water, mash the potatoes with a crush, add the onion. Stir, salt and pepper. Allow to cool to room temperature.
  • Sift flour on the table and collect in a slide. Make a depression in the center, drive in an egg, pour in 3 tbsp. l. vegetable oil, add half a glass of water. Knead the dough in a circular motion, gradually adding another 100 ml. water. In terms of consistency, it should turn out to be quite dense and elastic. Cover the kneaded dough with cling film, let it stand for 15 minutes. Lubricate the table surface with vegetable oil. Divide the dough and filling in half. Roll out half of the dough with a rolling pin to a thickness of 2 mm, stretch it with your hands. The thinner the better. Put half of the filling at the beginning of the layer. Gently roll the filling into the dough, like a roll, so that the dough at the edges covers it. Do the same with the second half of the dough and the remaining filling. Having retreated 5 cm from the edge of the roll, squeeze the roll across with the edge of the palm, and then twist it in this place. The same must be done a few more times to divide the whole roll into separate portions. For each product obtained, the dough should hide the filling well. Place each piece on its side and press lightly with your hand. Heat the pan, pour in the vegetable oil for deep fat, about 1 cm from the bottom of the pan. When the oil is hot, fry the pies on both sides.
