Soaked Orange Buns

Ingredients

Dough:
dry yeast (saf-moment) 1.25 tsp
wheat flour c. from 320-350 g
milk 70 g
cream 33-35% 50 g
egg 60 g
salt 0.75 tsp
sugar 40 g
butter 20 g
Orange juice 25 g
1/2 orange zest
Filling:
butter 30 g
powdered sugar 2 tbsp. l
1/2 orange zest
Impregnation:
Orange juice 30 g
powdered sugar 2 tbsp. l
Fill:
cream 33-35% 100 g
powdered sugar 1 tbsp. l

Cooking method

  • Mix the yeast with flour (leave 2 tablespoons of flour from the total), add warm milk, cream, salt, sugar, egg, orange juice and start kneading. As soon as all the flour is evenly moistened and the dough is gathered into a single lump, stop kneading and leave the dough alone for 15-20 minutes.
  • Grind softened butter with orange peel. Add oil and 1 tbsp. l flour into the dough, continue kneading. Add the rest of the flour gradually, as needed. It took me (total) 320 g flour to get a very soft, non-sticky dough.
  • Fermentation -12 hours in the refrigerator.
  • Allow the dough to warm at room temperature for an hour before cutting. Roll out into a layer about 3 mm thick, grease with filling.
  • Roll up the short side and cut into washers 2.5-3 cm thick.
  • Place in a mold (26 cm) lined with baking paper. Proofing under the foil for 45-60 minutes until doubled.
  • Bake in an oven preheated to 220C (convection 200C) degrees with steam for the first 8-10 minutes, then lower the temperature to 200C (convection 180C) degrees and bring the rolls to readiness.
  • For impregnation, mix orange juice with powdered sugar.
  • Mix cream with icing sugar.
  • On hot buns, right in the mold, apply impregnation and then cream.
  • Cover the hot rolls with foil and leave for 40-50 minutes.
