Coconut bun (using coconut milk and coconut oil cake)

Ingredients

Milk 200 ml
Margarine or butter for baking 150 g
Table egg 1 PC
Sour cream 2 tbsp
Sunflower oil 1 tbsp
Salt 1 tsp
Sugar 2 tbsp
Flour / s 600 g
dry pitch yeast 1 1/2 tsp
Yolk for coating 1 PC

Cooking method

  • First, I made Coconut milk (recipe for making poppy milk here https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=343945.0 ). In my case, we will cook in the Profi Cook PC-MSM1024 Multi-blender.
  • 1 Pour 1 liter of water into a blender bowl and bring to a boil and pour in the coconut flakes - bring to a boil. Then transfer to the 80 g program for 15 minutes with blending. Blending starts every minute and lasts 10 seconds. Pour the prepared mixture into cheesecloth and squeeze the cake - you get milk and cake.

  • Pour milk into jars and let cool. We put the cooled milk in the refrigerator. Gradually, a film similar to butter forms on the surface of the milk (like cream in homemade milk), it hardens in the refrigerator. We remove this oil and grate it - we will use it for baking.

  • 2. Making the dough. The dough was made in KhP Moulinex on the Yeast dough program!
  • For dough: put 1 tsp of sugar in a bowl from the total mass of sugar + yeast + slightly warmed milk, about 100 ml + flour from the total mass. There is so much flour to form a mushy consistency! Mix everything and let stand for about 30 minutes. During this time, the yeast will start working and the volume will approximately double.
  • We load all the remaining ingredients into the HP and spread the dough. Set the Yeast dough program - duration 1 hour 25 minutes. 30 minutes kneading and proofing for 55 minutes.
  • 3. While the dough is cooking, prepare the coconut cake. Preheat the pan and dry the cake, if possible, evaporate the remaining moisture. You will get dry coconut flakes.

  • 4. Then we take out the dough, it turns out 1100 gr. Divide the dough into 2 parts, stretch, give a rectangular shape. Then we spread the poppy seeds (cake), sugar and coconut oil on top. We form a roll and artistically pinch the edge. Put on a baking sheet and grease with yolk. We put in the oven and the baking time is about 35 minutes.
  • (I have an ordinary gas oven, two burners - upper and lower. I put a bowl of water on the bottom of the oven).

Marina, how does coconut cake taste to you? I can't imagine "what it is and what it is eaten with." You have a snow roll on the cut. I wanted to thank you again, but it will be possible only later. Thank you very much !

lungwort, Thank you!
In fact, the cake, when it was dried, it became similar to coconut flakes, only smaller - fluffy! but the taste seemed the same to me! Tomorrow I want to use it as a breading for cheesecakes - let's see what comes of it! I experiment everything!

Will come out!

Fantasy, Marinochka! Luxurious pastries, beautiful, hearty rolls!
And the airiness due to coconut milk?
When kneading the dough on the tortillas, I use real coconut oil, the tortikas are thin and soft.

lu_estrada, Thank you!
Maybe it gives coconut milk more softness and airiness! I made a biscuit like that and used coconut milk from a can, so the biscuit turned out to be very tender and melted right in my mouth!

What a beauty! It's time to think about such a blender. A very appetizing pie came out.

This is yeah! In flight of human imagination! I still have to grow and grow
Only I did not understand, but how much shavings should I put? And what is it - the most ordinary packaged for baking? Or some kind of special NOT processed?
I am shocked by the fact that the oil turned out!
Mar_k
RybkA, The shavings were originally used the most common, bought in the department where everything is for baking! Yes, she smeared her lips with oil, they became soft, otherwise they were weathered in the cold! And they also suggested that I was doing a hair mask - the hair is silky after and rinses off well!
