Pitted cherries 200 g

Gelatin 6 g
Custard:
Yolks 2 pcs.
Sugar 100 g
Wheat flour 1 tbsp. l.
Milk 270 ml + 50 ml
Butter 80 g
Vanillin pinch
Gelatin 12 g

Cooking method

  • Light cake:
  • 1. Beat eggs with sugar, add soda, slaked with vinegar, gradually add flour. Bake in a greased and lined form at 160aboutFrom 15-20 min.

  • 1. Everything is the same as for a light crust, only the flour is pre-mixed with cocoa.

  • 2. Put the marshmallow on the finished cake and bake for about 5 minutes to increase the volume of the marshmallow. I got the idea from Elven in the recipe Brownie "Mississippi Dirt"

  • Cherry layer:
  • 1. Separate the cherries from the seeds, I got 200 g of cherries and 200 ml of juice.
  • 2. Dissolve gelatin in water (2 tablespoons), add a small amount of cherry juice, cook on the stove over low heat (you can use a water bath) until the gelatin dissolves. Add sugar, stir. Pour in the rest of the juice, send it to the refrigerator for solidification (the jelly should not solidify completely).

  • 1. Mix the yolks with sugar and flour. Pour hot milk (270 ml) in small portions. Cook over low heat until thickened.
  • 2. Add softened butter and vanillin to the slightly cooled cream. Add gelatin (boil the swollen gelatin in a water bath with 50 ml of milk until dissolved). Send to the refrigerator for solidification (the cream should not completely solidify).
  • Assembly:
  • 1. Put the white crust into a split form, then put the cherries mixed with semi-solidified jelly. Send it to the refrigerator for an hour.

  • 2. Put half-hardened custard, cover with dark crust. Melt the chocolate in a water bath, add milk, pour over the cake, decorate with cherries.

The cake turned out to be quite tasty. I cooked on a whim, I didn't know the proportions in advance. Next time I'll try to make the cakes thinner, thicker custard.
