Risotto with sweet pepper

Ingredients

rice for risotto (carnrolli, arborio) 300 g
large red bell pepper 1 PC
large tomato 1 PC
vegetable broth 1,5L
butter 50gr
grated parmesan 4 tbsp. l.
extra virgin olive oil, salt, pepper

Cooking method

  • Peel the pepper by removing the stalk and seeds, cut the pulp into cubes. Make a cross-shaped incision on the tomato, dip it in boiling water for 30 seconds, pour it over with cold water, peel it, remove the seeds and liquid; cut the pulp into cubes.
  • Heat some olive oil in a skillet and fry the peppers and tomatoes in it over low heat until soft, stirring occasionally, for 10 minutes. Season the vegetables with a blender and turn into a coarse puree.
  • Bring the broth to a boil and keep it hot over minimal heat throughout the risotto preparation process. Put the rice in a saucepan, add 1 ladle of stock and cook the rice, stirring with a wooden spoon, until
  • not all liquid is absorbed. Then pour in 1 more ladle, cook, stirring, until absorbed. After that, in the same way, pour in the broth half a ladle and cook each time until absorbed, without stopping stirring
  • When the rice is ready (the risotto should have a creamy texture, but each rice in the center should remain slightly firm), after about 20-25 minutes, turn off the heat and add the vegetable mixture to the rice, creamy
