Sourdough bread with poppy seeds, onions and turmeric

Ingredients

starter 67 gram
sourdough water 134 grams
sourdough flour 134 grams
flour, premium 667 gram
leaven all
cold water 414 gram
salt 17 grams
vegetable oil b / s 10 grams
poppy 20 grams
turmeric 3 grams
onion 60 grams

Cooking method

  • 100% moisture "eternal" wheat leaven.
  • Mix starter with water, add flour, cover and leave for 10-12 hours at room temperature.
  • Dough.
  • Knead all ingredients except poppy seeds, onions and salt at low speed with a hook for 5 minutes. Autolysis 45 minutes. Add salt and knead for 10 minutes. At the end of kneading add poppy seeds and finely chopped onion. We make sure that they are well distributed in the test.
  • Leave at room temperature for fermentation for two hours. Stretch and fold the dough every 30 minutes. After 2 hours, stretch and fold the dough and refrigerate for 3 hours. Remove the dough, form 2 loaves of bread of any configuration. Place in baskets well-dusted with flour, seam up. Cover and refrigerate for 19 hours.
  • Preheat oven to 240 degrees. Turn baskets of dough on a baking sheet. Make cuts and place in oven. We bake the first 15 minutes with steam. Then remove the steam, reduce the temperature to 190 degrees. Bring to readiness. It took me 40 minutes to complete the baking.

The bread came out with a crispy, I would even say rough, crust. Very soft, springy and lacy crumb of pleasant yellow color. Fragrant.
