Cherry Truffle Cake

Ingredients

Biscuit:
Almond flour 120 g
Sugar 150 g
Eggs (large) 6 pcs.
Wheat flour 25 g
Cocoa powder 25 g
Powdered sugar 60 g
Cherry cream:
Cherries (fresh or frozen) 150 g
Dark chocolate 200 g
Powdered sugar 25 g
Butter 200 g
Rum or cognac 50 g
Cherry impregnation:
Water 100 g
Sugar 50 g
Cherry juice 50 g
Rum or cognac 50 g
Cherry layer:
Cherries (fresh or frozen) 300 g
Sugar 150 g
Agar agar 4 g
Chocolate glaze:
Dark chocolate 100 g
Glucose syrup 25 g
Cream 33% fat 150 g

Cooking method

  • Cherry layer:
  • Mix the berries with sugar and puree (it is convenient to do this with an immersion blender. Put on fire, heat until sugar is completely dissolved, add agar, bring to a boil and pour to solidify into a mold with a diameter of 18 cm (cover the bottom with baking paper).

  • Mix almond flour with powdered sugar, two proteins and whisk everything together with an immersion blender until smooth (you get a mushy mass). Beat yolks (six pieces) with sugar and combine with almond mass, beat all together again.
