Ingredients

matsoni (yogurt, yogurt) 500 g
milk 1 glass
egg 1 PC
butter 100 g
sunflower oil 150 g
flour 800 g
dry yeast 1 tbsp. l.
yolk (to lubricate the cake) 1 PC
sour cream (for lubricating the cake) 1-2 tbsp. l.
salt, sugar by a pinch
FILLING:
Imeretian cheese (or a mixture of mozzarella and feta cheese) 1 kg
eggs 2 pcs
butter 50 g

Cooking method

  • Of course, I am not a great connoisseur of Georgian cuisine, but if I come across well-designed recipes, I try this cuisine! We will prepare khachapuri from 1/3 of the indicated ingredients - these are 3 flat cakes, about 17 cm in diameter.
  • We will stand the dough in a multicooker on the TESTO mode of the same name. But first,
  • 1. Heat the milk, add sugar, yeast, 2 tbsp. l. flour and put in a warm place for 15 minutes.
  • 2. Add yogurt, most of the flour. egg and begin to knead. Add flour as needed. In the process of kneading, add melted butter and salt. From time to time we moisten our hands with vegetable oil and continue to knead the dough further. After 20 minutes, the dough should not stick to your hands.
  • 3. Roll the dough into a ball and put it in a multicooker bowl, greased with vegetable oil for proofing. TEST mode, time - 1 hour.Khachapuri in Brand 701 multicooker and oven
  • 4. After 1 hour, take out the dough, knead it and put it back in the bowl for 30-60 minutes.
  • 5. While the dough is in the second proofing, prepare the filling: rub the cheese on a coarse grater, add the egg and softened butter - mix.
  • 6. After the second proving, we take out the dough from the multicooker bowl, divide it into 3 parts and flatten it on the floured work surface. Put the filling in the center of the cake.Khachapuri in Brand 701 multicooker and oven
  • Then we collect (fasten) the edges of the cake into a "knot" of the edge of the dough.
  • 7. Turn the cake over with the seam down and roll it out 1-1.5 cm thick, with a diameter up to the size of a multicooker bowl 🔗
  • 8. Turn on the BAKING mode and put the cake in a greased bowl. In the cake, first make several punctures with a fork, and in the center a small hole.

  • Further baking was continued in the oven. Pre-greased the cake with a mixture of yolk and sour cream and sprinkled with grated cheese. We bake for another 15 minutes at 180 * C.
  • We take out the finished khachapuri from the oven and cool on a board under a towel for 10 minutes.
