Ingredients

whole wheat flour 15g

Cooking method

  • Ripe dough
  • Dissolve yeast in water, add salt and flour. Knead the dough until all ingredients are evenly distributed. Leave at room temperature for 1 hour, then transfer to the refrigerator. Cold ripening can take 12 to 24 hours.
  • Main dough
  • Dissolve yeast in a little water. Add the rest of the water to the ripe dough and dissolve slightly. Then put all the ingredients, except for the salt, into the bowl of the food processor. Knead at low speed for 4 minutes. Then add salt and knead for another 6 minutes.
  • Put the finished dough in a container and leave to ripen at room temperature for 90 minutes. During this time, the dough * stretch-fold * 2 times. At 30 and 60 minutes.
  • Then divide the dough into 2 parts. Roll up into a ball. Place on paper or baking sheet for proofing. Grease the top with mustard and sprinkle with sunflower seeds.

  • Cover with foil. Proofing should be carried out within 60 minutes.
  • Bake in an oven preheated to 230C. First 15 minutes with steam. Then remove the steam and bake for another 20 minutes at a temperature of 200C.
