  • The French serve this soup in heat-resistant pots, which are preliminarily sent to the oven before serving to brown the bread and cheese (we did this in advance).
  • The soup is fragrant and very spicy, toasts with cheese give the soup a unique taste!

I also have a version of Yulia Vysotskaya - there is generally cider and vinegar she has "sherry". I didn't have either one or the other. And Julia adds vinegar and cider directly to the plates - very interesting!
lungwort
Marina, yours is better than Vysotskaya! Onion soup is a dream ...
MariS
Natasha, Thank you! Nice to hear from you again!
I would like to try another option - it is quite worthy.

Hope the onion eater will enjoy it! Sashul, try for good health. I have few onion-eaters in my family - I often can't cook.

Oh, and we, and we too - scary onion eaters!

Here they are - our "terrible" addictions, where they come to light ...
Flax, you will try, then and the onion longer after frying - this is the whole trick.
There - in Paris, they fry the onions until a thin crust (soft, not burnt) at the bottom of the pan, and then they scrape off this crust and simmer a little more with cognac.
Of course, I did not subject the MV bowl to such a ruthless process!
Elena Tim
Yes, yes, Marish! I was going to do just that, just as I felt that it would be more correct! Thanks again!
MariS
Well, Len, you know everything yourself! Cook for health and share your story - you always have a story !!!

Marina, in Montmartre, next to the square where artists trade, there is a cafe in a corner house. There is an open kitchen and you can see how they cook. There was the most delicious onion soup there. And they fried the onions and then flambéed them !!!!

Tanyush, in the accompanying recipe with onion soup article about J.-P. Sartre (magazine "Gastronom" 2013. №11) says that he raised the rating of Parisian cafes, creating his masterpieces in noisy cafes.
The first line in the restaurant rating was the Flore cafe on the Boulevard Saint-Germain. Then, in the 40s, it turned into a Mecca of Parisian bohemia.
To this day, the cafe collects sold out.
Of course, this soup is now in many cafes! I would now gladly visit those cafes where Parisian bohemians gathered and quietly breathed that air ...
Babushka
Marina, Paris is beautiful but cold. Allows to love himself, but does not love anyone ...
It's my opinion. ... It may not be the same as the majority.
MariS
In my travels it is always pleasant for me to visit quiet, cozy cities, wander the narrow streets of ancient cities, where small cafes beckon with their silence and the opportunity to retire. In such places, as a rule, they are always kind to tourists.
Babushka
I also love quiet towns ...
