Ingredients

Flour 3 - 3.5 stacks
Water 200 ml
Salt 0.5 tsp
Sugar 3 tsp
Rast. oil 1.5 tbsp. l.
Fresh yeast 20-15 g

Cooking method

  • Dissolve yeast, sugar, salt in warm water and knead the dough in half of the prepared flour, let it rise. Then add the rest of the flour, knead the sunflower oil well and let it rise again.
  • From the finished dough, make small balls (it is better to mold them with your hands, oiled with vegetable oil), put at some distance from each other in a saucepan (I use an aluminum cake pan), let them come up and bake in the oven. After proving and baking, the donuts will take up their entire shape, but they will easily separate from each other.
  • Garlic dressing
  • Add vegetable oil, a little boiled water, lemon juice to the pounded garlic with salt and stir well.
  • When the donuts are baked, they must be immediately watered with the dressing, shaken several times. Serve hot. (I like to serve garlic sauce separately in a bowl).
  • And more advice. I put the dough for 1.5-2 minutes at min power in the microwave (so that it becomes lukewarm) and leave it there to come up. Dough rise time is significantly reduced.

I propose a recipe for donuts for Ukrainian borscht, which I have been using myself for a long time. Recipe from the book "Secrets of the generous table" 1976 release (found in the mother-in-law in the attic).
True, I did not knead this dough in a bread maker, since I had it quite recently.

400 g wheat flour
20-30 g yeast
0.75 cups water
1 tbsp. spoonful of sugar
1-3 st. tablespoons of sunflower oil

For gravy:

2-3 st. spoons of kvass
1 head of garlic
2-3 st. tablespoons of sunflower oil

In warm water (a third of a glass), dilute sugar, yeast, salt (for some reason there is no salt in the ingredients, but I think about 1-1.5 tsp), add 100 g of flour and knead a thick dough. Allow to come up, then add the rest of the water, flour, sunflower oil, knead well and let rise again. Form walnut-sized dumplings from the dough and bake on a sheet in the oven over low heat.
From a mixture of garlic, pounded with salt, kvass and butter, make a gravy and pour it over the donuts before serving.

It's funny to watch small children do it. Train them to be creative! ... Finished "balls" are laid out on parchment on a baking sheet.
Cover the dough with a napkin for the final rise and after 20-30 minutes, spread with milk on top, place on a medium wire rack in an oven preheated to 205 ° C. The baking time is about 20-25 minutes, the buns are SMALL, well, very small - and with what appetite they are "devoured" by the grandchildren.
For adults, after baking, you can spread the koloboks with garlic paste and sprinkle with finely chopped dill. Serve with the first courses, and with the sauce of your choice, for the second.
Today I kneaded the dough in a Panasonic 255 bread maker in dumplings mode, doubling the load of ingredients. 5 minutes before the end of the batch, I added finely chopped rosemary. The choice is large - you can fresh mint, wild garlic, parsley, thyme, anise, dill, savory, etc. Alternatively, use any dry aromatic additives

I counted on 400 grams of flour and put it right away (without making the dough) in the order, according to the instructions for the HP. About 70 grams of dough went to 1 donut. In total, 10 donuts were obtained from this amount of dough. Divided, blinded, put in a mold greased with vegetable oil and sprinkled with bread crumbs. Dispersed for about 30 minutes (allow to come up). I smeared the top with yolk and milk. Baked in the oven at 180 degrees for 25-30 minutes.
Hot spread with garlic sauce, in which I added literally 0.5 tsp. egg white (the sprinkling did not fall off during meals).

Dough:
warm water - 100 ml
milk - 50 ml
egg - 2 small (or 2 regular; take one and a half on the dough, leave 0.5 on the shaving brush on top)
salt - 0.5 tsp.
sugar - 0.5 tsp.
vegetable oil (I have mustard oil) - 50 ml
dry yeast - 1.5 tsp.

Program: "Dough"

Garlic Sause:
garlic - 6-7 cloves (chop with a garlic press)
salt - 1 tsp.
boiled cooled water - 1 tsp.
dill - 2 tablespoons chopped frozen
vegetable oil - 1 tbsp. l.

1. Knead the dough out of the above products. The dough should be soft, slightly sticky to your hands. Better then, when cutting, add a little flour. If there is a bread machine, put it on the "dough" mode.Put the dough in a warm place for 1.5 hours.
2. Knead the dough and make 16 rolls from it. We are very sorry. We hold the dough as if in a fist and squeeze out something that is squeezed out (oh, now I'm going to die from my own explanations pardon) - it's a bun. We roll it into a ball and put it in a greased mold ... This is how we squeeze it out until ...
3. Cover with a clean towel and let the buns distance for min. 40-45. Lubricate the buns with a slightly beaten egg.
4. Meanwhile, heat the oven to 190 g. We put the buns in the oven and bake for 22-25 minutes (depending on your oven). For about 15 minutes, cover the buns with foil.
5. While the buns are baking, make the dressing:
Crush the garlic with salt (I just crushed the garlic and mixed it with salt), add oil and water. We mix.
6. Remove the buns from the oven, pour hot dressing over them and shake them several times so that the sauce is absorbed.

1 tsp Sahara

Mix kefir with soda, let it sizzle, add salt and sugar.

Put the first batch of ready-made donuts in a saucepan, close the lid tightly so that they do not cool down.
Bake the rest, then pour the salamur on the donuts and shake the pan well.

Serve warm with borscht, soup or any dish you wish.

You can bake donuts in advance and store for a couple of days in a tightly sealed container, if necessary, warm them up in a micro and grease them with salamur before serving.
