  • I have a sourdough from Viki, semi-finished. I fed her 7 hours before baking.
  • After 7 hours (with a tail)), mix all the ingredients except for the salt in the food processor for 10 minutes. This is where those additional 20g (possibly more) flour come in handy, since spelled flour has low gluten.
  • After 10 minutes add salt and knead for another 5 minutes.
  • Then transfer the dough to a container and leave for 2 hours in a warm place. During this time, the dough * stretch - fold * once, after 60 minutes.
  • After 2 hours, form a loaf from the dough and put in a basket for proofing, seam up, for 1 hour.(the authors recommend a couple of hours, but the dough grows so much that according to my observations, even 1.20 is a lot)
  • Meanwhile, preheat the oven to 250 C.
  • Turn the dough on a shovel, make cuts and place in the oven. Bake for 40 minutes, first 10 with steam, then lower the temperature to 225C and bake until tender.
  • Cool the finished bread.
