Fairy Tale Cake

Ingredients

Roll:
flour 100 g
corn starch 25 g
sugar 130 g
egg 220 g (4-5 pieces)
Cream:
yolk 2 pcs (if the egg is small) or 1 if the egg is large)
vanilla sugar 1 tsp
water 20 ml
condensed milk 120 g
butter 200 g
dark chocolate 100 g
vanilla sugar 1 tsp
Syrup:
sugar 100g
water 100g
cognac 3 tbsp. l.

Cooking method

  • I would like to suggest a recipe for the "Fairy Tale" cake, made in the form of a roll, which was sold in confectionery stores in the city of my Soviet childhood. I liked it very much because of the decoration in the form of mushrooms with baked hats and butter animals. This is how I remember it, and also the taste of butter chocolate cream with which the roll was missed.
  • In the recipe, I made it more chocolatey, replacing cocoa with dark chocolate.
  • Preparation:
  • Cream:
  • In a water bath, boil the yolks, water, vanilla sugar and condensed milk until a creamy consistency. Refrigerate. Add softened butter, vanilla sugar. Beat the cream with melted chocolate.
  • Roll:
  • Beat eggs with sugar until fluffy. Stir the sifted flour with starch and add to the eggs, mix everything gently.
  • Put the dough on parchment paper and bake until tender at 180about minutes 15 -20. (Depends on the oven. I have a regular gas one).
  • Syrup:
  • Dissolve sugar in water, bring to a boil, boil a little. Cool and add cognac.
  • Assembly:
  • The finished baked roll must be soaked in syrup, then greased with cream (approximately 2/3) and rolled into a roll, which is also coated with the rest of the chocolate cream (1/3). Decorate as you please.
