Ingredients

Eggs
Wheat flour

Cooking method

  • Peel potatoes, boil, cool and mince. Beat in an egg, salt, pepper, add flour, you can also finely grated cheese. Stir very well until smooth. With wet hands, form a cake, put the filling, form a ball, roll it evenly in flour, moisten in an egg, you can even in breadcrumbs, and fry until golden brown in vegetable oil.
  • Remove with a slotted spoon on a paper towel (to absorb excess fat).
  • Transfer to a dish.
  • Croquettes are served with sour cream.

Potato croquettes

for 5 potatoes
1 yolk
salt
pepper
ground crackers

Filling:
1 onion
mushrooms

Boil potatoes in their skins (you can use a microwave oven), peel, mash in mashed potatoes, adding yolk, salt and pepper.
Fry the onion and mushrooms separately. Make small balls by putting the filling inside. Roll in ground breadcrumbs.
Bake in the oven until golden brown (15 to 20 minutes depending on the oven). For those who eat fried: you can simply fry in a pan or deep fat.

Potato croquettes

Serve with sour cream sauce with garlic and herbs. Sour cream can be replaced with yogurt.
