Chocolate roll with whipped cream

Ingredients

Sponge roll:
Eggs 6 pcs.
Sugar 80 g
Flour 50 g
Potato starch 10 g
Cocoa 30 g
Filling:
Raisins 100 g
Water 50 ml
Sugar 50 g
Rum 100 ml
Mousse:
Egg yolk 80 g
Sugar 30 g
Coffee brew
(100 ml water + 20 g coffee)
40 ml
Dark chocolate 200 g
Gelatin 10 g
Whipped cream 400 g
Glaze:
Chocolate 50 g
30% cream 30 g
Rum syrup,

Cooking method

  • Roll dough
  • Beat eggs with sugar until fluffy. Cocoa, flour, potato starch are sifted through a sieve.
  • Gently mix the bulk ingredients with the egg mass. Caution.
  • Spread the resulting mass evenly on a baking sheet with lined parchment paper.
  • The roll is placed in an oven preheated to 180-185 ° C (hot air). Bake for 10-12 minutes.
  • Leave it to cool, then remove the parchment paper.
  • (I roll it up in a towel while still warm)
  • Raisins are soaked in rum
  • Boil sugar and water, pour in rum and add raisins. Cover and leave for an hour. Drain (do not pour the rum syrup). Then drain the liquid into a separate container.
  • Coffee and chocolate mousse
  • Bring 100 ml of water to a boil.
  • Add 20 g of coffee and stir.
  • Coffee is infused for several minutes.
  • Melt the chocolate in the microwave or water bath. Soak gelatin in water.
  • Whisk the egg yolks and sugar together. When the sugar has dissolved, add the coffee and stir vigorously until the mixture thickens. Melt the gelatin in the microwave.
  • Cool to 40 C. Mix with whipped cream. Melted chocolate and gelatin
  • Put the mousse on a biscuit and spread evenly. Lay out the raisins.
  • Roll the roll tightly with parchment paper and refrigerate for about an hour.
  • Glaze
  • In the microwave, heat the cream and chocolate. To stir thoroughly. Cool slightly. Cover the roll with glaze.
  • Decorate with chocolate chips and nuts.
  • I also decorated with chocolate Christmas trees and snowflakes.
  • Melted the white chocolate. Poured chocolate onto film (file). When the chocolate had hardened, I cut out the figures with a cookie cutter.
