Ingredients

For 2 rolls:
Wheat flour 500 g
Cottage cheese 250 g
Sugar 200 g
Butter (margarine) 200 g
Eggs 2 pcs.
Baking powder 2.5 tsp
Salt pinch
Cinnamon 0.5 tsp
Cardamom 0.5 tsp
Vanilla sugar 2 tsp
Raisins 150 g
Candied fruits (pineapple and papaya) 100 g
Zest 1 orange
Zest 1 lemon
Rum (liqueur) 2 tbsp. l.
For the top of the rolls:
Powdered sugar
Butter 40-50 g

Cooking method

  • I love baking with cottage cheese very much. How many have tried - do not count. But this recipe is one of the most delicious, in my opinion. I bake two rolls at once.
  • In the finished baked goods, the taste of cottage cheese is absolutely not felt. The dough tastes like shortbread. Very fragrant, crumbly.
  • The roll looks festive. It can be served to guests.
  • Try to cook. Lovers of shortcrust pastry should really like it.

  • Mixing preparation 1.
  • - If the margarine (butter) is removed from the refrigerator in advance, then this mixture can be rubbed with a spoon.

  • Oil (i use margarine) grind (or beat) with eggs and cottage cheese. Knead well.

  • 1. Mix baking powder with sifted flour.
  • 2. Add sugar, salt, vanilla sugar, seasonings, lemon and orange zest.

  • 2. Add rum (or liqueur), washed raisins and candied fruit.
  • 3. Knead the dough well with your hands.

1. This recipe I took from the magazine "Smack" in the mid-90s. I have been baking for many years, changing almost nothing.

2. The recipe suggested using nuts (200 g). Never added. And without them it is very, very tasty!
The candied fruits I added give not only an elegant look to the cut, but also complement the already rich taste of the roll.

3. I noticed that the longer the roll lies, the tastier and more aromatic it becomes. All spices and additives begin to appear. For the experiment, this baking was kept for 5 days. Not stale, it became even tastier.

I didn't watch the program. But she herself realized that long-term storage is only good for the roll. This "discovery" was made quite recently. Previously, they ate in 1-2 days, there was simply nothing to store.

Try not to add cottage cheese above the norm next time - then the shape of the roll will remain. But the roll grows in any case more than you expect! In the photo "before" and "after" the difference is clearly visible. When forming, make the workpiece high (it will grow in width itself)

If the raisins are fresh, not dried out, then I just rinse them well in many waters, then dry them on a paper towel and add them to the dough (in some recipes, they are rolled in flour - this is usually specified in the description).
If the raisins are stale, then, after rinsing well, fill them with hot water and keep them until softened.
I wash candied fruits if I bought them by weight. From the package - I do not rinse. I grind large pieces.

Olesya, I think it is possible to increase the amount of dried fruits. It is important that they are not too wet. Just roll it well in flour. But with nuts, if you want to add, then be careful: an overabundance of them usually makes the baked goods heavier, and the roll may not bake.
