Meringue Cake - Nothing to Do

Ingredients

Cakes:
Protein 6 pcs.
Granulated sugar (fine) 300 g
Powdered sugar 180 g
Salt
Cream:
Butter 200 g
Condensed milk 1 can
Glaze:
Butter 3 tbsp. l.
Boiling water 4 tbsp. l.
Powdered sugar 120 g
Cocoa powder 100 g

Cooking method

  • It is a very light cake and large enough.
  • Only 3 cakes.
  • Cakes:
  • For each cake, take 2 squirrels, beat with a pinch of salt until well foam. Slowly add 100 g of sugar and 60 g of powdered sugar while whisking.
  • Draw the size you want on baking paper. I have 25 x 33 cm. Distribute the whipped mass over baking paper to size. Bake for 1 hour at a temperature of 100 grams on the "convection" mode. I have not used a sheet from the oven. I just put the meringue paper on the wire rack.
  • Repeat the process with the rest of the cakes. Separate the paper from the cakes immediately.
  • Cream:
  • Beat butter and whisk, add condensed milk.
  • Smear the cakes with cream and put out in the cold. I just put it on the balcony.
  • "Glaze":
  • I put it in quotes, since this is actually not a shiny icing, but just a delicious bitter chocolate mass, which is combined with meringue and cream mmmmmm ...
  • Pour the butter with boiling water and add the powder and cocoa with constant stirring. Stir until smooth.
  • Assembly:
  • Place icing on the assembled cake in random order and sprinkle with the rest of the meringue from the paper.

Sabrina, if there is no such regime, then I would try on one protein for a start. If the oven is electric with an indication of the temperature, then I would set it to 100 degrees and slightly open the door. If the oven is gas, then the minimum gas and watch out ... Good luck!

I tried to bake 2: one on the middle wire rack, just on paper, and the other below, on a baking sheet with an inner wire rack. But, despite the convection, the process was slower. The middle of the bottom cake was soft. I did not like. Now I do it one at a time.
Although, I often cook dishes in 2 levels of meat or fish and vegetables.

I got a very thick frosting, I had to transfer it to the cake, and not water it. I did it according to the recipe, but I took a little less cocoa and it was good, otherwise I would curl up in a lump.

Thanks to the author for the cake recipe. I baked in convection mode, level 3, 1.5 hours was not enough (the meringue was wet inside). And I didn’t use the author’s cream, I was afraid of calories, I took cherry jam in chocolate. And I regretted it. The cream came out rather dry.
