Rabbit with flambé sauce

Ingredients

rabbit 1-1.2 kg
carrots (medium) 1 PC
For the marinade:
soy sauce 2-3 tbsp
olive oil 3 tbsp
balsamic cream 1 tbsp
honey 1 tbsp
cognac 50 ml
mixture of four peppers, freshly ground 1 tsp
thyme dry 0.5 h l
For the sauce:
bulb onions 2 pcs
garlic 2-3 cloves
ground paprika 1 tsp
mixture of four peppers, freshly ground 0.5 h l
chilli taste
salt taste
cognac 50 ml
cream 33% fat 100 ml
olive oil and butter for frying

Cooking method

  • 1. Mix all the ingredients for the marinade. Cut the rabbit into portioned pieces, rub them well with the resulting marinade and leave to marinate for 30-40 minutes.
  • 2. On the bottom of the baking dish, place carrots cut into pieces (if you wish, you can also put peeled whole potatoes here, not too large), put rabbit pieces on top. Pour in the rest of the marinade, add hot vegetable broth or just water (about 150-200 ml), cover and put in an oven preheated to 160-170C for about an hour (until the desired tenderness of the meat).
  • 3. During this time, prepare the base for the sauce. Cut onion into cubes, garlic - as small as possible and roast in a saucepan in a mixture of oils until transparent.

  • When the fire goes out, add paprika, salt and pepper, stir and heat everything together for another minute. Remove from heat and puree until smooth.
